研磨粗細與萃取

研磨粗細 -沖煮咖啡時,研磨程度越細,溶出物質的速度越快。
Grind Size - The finer the grind, the faster the material will dissolve when brewing coffee.

因此,在同樣萃取量之下,咖啡粉顆粒越細,與水接觸的時間相對就要越短(水柱相對大);反之研磨越粗,與水接觸時間要越長,才可增加萃取率;依照研磨狀況調整,才不易造成萃取過度或不足的狀況。
Therefore, under the same amount of extraction, the finer the coffee powder particles, the shorter the contact time with water (the water column is relatively larger); on the contrary, the coarser the grind, the longer the contact time with water to increase the extraction rate; Adjust according to the grinding conditions, so that it is not easy to cause over-extraction or under-extraction.
