For this showdown, we tested three top-tier manual grinders using the exact same coffee: Ethiopia Bench Maji Hummingbird Geisha G1, Washed Process. This lot boasts a highly defined foundational profile characterized by white flowers, orange blossom, lemon, bergamot, and Earl Grey tea, leading into a lingering honey green tea finish with excellent sweetness. Because it is naturally clean with high-definition floral and fruit tones, it serves as the perfect canvas to observe the structural differences between grinders.

If a grind profile contains a higher proportion of fines, water passing through the coffee bed will inevitably extract more soluble solids, naturally driving up the TDS. However, these additionally extracted compounds are not exclusively composed of pleasant sweetness and aromatics; they often include higher concentrations of astringency, bitterness, or a drying finish.

The R38 delivered the most balanced performance between the two Rosco models and the C60. It showcased white flowers, lemon, and bergamot, complemented by a lemon-zest sweetness and honey green tea. The sweetness was well-represented, offering a satisfying body and focused flavor articulation. While its high TDS provided a certain density and tea-like texture, the flavor separation felt more restrained compared to the C60, tightly centering its character along a linear path of lemon, bergamot, and honey tea.
M38 則更能看出細粉與分布可能造成的影響。它有檸檬、佛手柑、蜂蜜綠茶,也有強烈茶感,但甜感偏弱,尾段出現檸檬皮澀苦與淡花香。這樣的杯型不是沒有個性,而是萃取中可感覺到較多邊緣感:茶感強,但甜感沒有完全托住酸質與苦澀。
The M38 clearly highlighted the potential impact of fines and an uneven distribution curve. It presented lemon, bergamot, and honey green tea alongside an intense, tea-like structure; however, the sweetness felt suppressed. The finish introduced a distinct lemon-peel astringency and bitterness, accompanied by faint floral notes. This cup profile is not without personality, but the extraction revealed noticeable edge artifacts: the tea-like texture was commanding, but the sweetness failed to fully cradle and balance the acidity and bitterness.

The C60 was the most intriguing cup of this session. Despite yielding the lowest TDS at 1.25%, it unpacked a brilliant bouquet of Earl Grey, orange blossom, yellow lemon, honey tea, ripe fruit, and apple tea. It was vibrant with bright acidity and sweetness, rounding off with a honey-tea sweetness in the finish, demonstrating the highest complexity of the trio. This proves that the C60 does not win by sheer concentration, but rather by extraction uniformity and flavor resolution. A tighter, more concentrated particle size distribution ensures a more even extraction as water flows through the coffee bed, allowing a clean, bright, delicate, and fully integrated flavor profile to shine.
這次的小結論很清楚:Rosco 的高 TDS,很可能來自較多細粉或較寬的粒徑分布;C60 的低 TDS,反而帶來更高的杯中透明度與甜感轉換率。對老饕來說,真正要看的不是數字高低,而是這個數字有沒有轉換成好喝的甜、乾淨的酸、清楚的花香,以及完整的尾韻。

The takeaway from this experiment is clear: the high TDS of the Rosco grinders likely stems from a higher percentage of fines or a broader particle size distribution. Conversely, the lower TDS of the C60 delivers superior clarity in the cup and a more efficient sweetness conversion rate. For the discerning palate, the ultimate metric is never the absolute number on a refractometer. Instead, it is whether that number successfully translates into a delicious sweetness, clean acidity, pristine floral notes, and a complete finish.
When ranked using this particular Geisha, the C60 stands out as the absolute leader in sweetness and complexity, followed by the R38, while the M38 leans heavily into a texturized tea and bergamot-driven profile. This serves as an excellent reminder: the true divergence among premium grinders lies not in grinding speed or adjustment micro-clicks, but in their ability at the exact same particle size setting to completely preserve the floral aromatics, sweetness, and intricate layers of an exceptional coffee.
