萃取率 、濃度傻傻分不清? Is extraction rate and strength concentration the same?
手沖咖啡,是為了萃取出咖啡豆中的可溶性物質。「 萃取率 」代表從咖啡豆中萃取出可溶性物質的比例;「濃度」則代表 一杯咖啡中含有可溶性物質比例。萃取過度,易產生苦澀感;萃取不足,易有尖酸青澀感。 濃度太低,會感覺水味重;太濃則滋味重難以入口。
Pour-over coffee is to extract the soluble substances in the coffee beans. “Extraction rate” represents the proportion of soluble substances extracted from coffee beans. “Strength Concentration” represents the proportion of soluble substances in a cup of coffee. Excessive extraction can lead to bitterness. Insufficient extraction can lead to astringency. If the concentration is too low, the coffee will be watery; if it is too strong, the taste will be too heavy and hard for taste.
