手沖注水影響水溫 Pour-over coffee water injection affects water temperature

手沖咖啡注入水柱時就等同在做攪拌動作,攪拌能加速萃取,且使萃取均勻。但在劇烈攪拌下,濾杯中的咖啡漿液會同時降溫;如果要讓咖啡漿液在特定溫度下被萃取,可用略高的水溫,並搭配較劇烈的攪拌(繞圈加快);若採用較溫和的攪拌,水溫就不用太高。

When doing pour-over coffee, water injection is equivalent to stirring. Stirring can speed up the extraction and make even extraction. However, under vigorous stirring, the coffee in the filter cup will cool down at the same time. If you want the coffee to be extracted at a specific temperature, you can use a slightly higher water temperature and use more vigorous stirring (speeding up the circle). Gentle stirring, the water temperature does not need to be too high.
