手沖參數 Pour-over Coffee Parameters

手沖咖啡需要注意的地方有哪些?以各項參數簡列如下 。各項參數都可微調、會有不同風味與口感喔。

What are the things to pay attention to when making pour-over coffee? The various parameters are listed below. Each parameter can be adjusted slightly and will produce different flavors and mouthfeel.

 

以烘焙度淺中焙為例
磨粉顆粒:刻度#4(小飛馬)
粉水比 :1:15
水溫:89度
悶蒸時間 :30秒
悶蒸粉水比 :1:1.5
沖煮時間 :2分30秒(含悶蒸)

Example using light to medium roast:

Grind size: Setting #4 (Little Horse)

Coffee to water ratio: 1:15

Water temperature: 89°C

Blooming time: 30 seconds

Blooming coffee to water ratio: 1:1.5

Brewing time: 2 minutes and 30 seconds (including blooming)
