沖煮之左右為難 A Coffee Brewing Dilemma

在沖煮咖啡前,會知道手上咖啡的焙度、風味調性等,接著可以有二個不同的沖煮方向:力求平衡型極致放大型

Before brewing coffee, you will know the degree of roast, flavor, etc. of the coffee in your hand, and then you can have two different brewing directions: strive for balance and magnify amplification.


沖煮平衡型 

Brewing for balance

一般人比較常用的是平衡型的想法,即淺培咖啡會用較高的水溫來沖煮咖啡,稍微深培的咖啡會用較低的水溫來沖煮咖啡;這是力求平衡型。
The average person more commonly uses the balanced brewing method. The lighter coffee will be brewed with a higher water temperature, and the slightly darker coffee will be brewed with a lower water temperature. This is the balance type.


沖煮放大型

Brewing for amplification

但我們也可以放大淺培或深培的特色,比如淺培咖啡有豐富的花果香調性,可以用80度的水來沖煮、而不是90~95度的水,如此花果香就會以更豐富的方式呈現,但因為用較低的80度水溫,喝起來雖香、但卻較酸、較沒這麼厚實。這是極致放大型。

But we can also magnify the characteristics of light or dark roast. For example, light roast coffee has rich floral and fruity aromas, and can be brewed with 80℃ water instead of 90-95℃, so that the floral and fruity aroma will be enhanced. It will be presented in a richer way, but because of the lower water temperature of 80 degrees, it tastes fragrant, but it is more sour and less body. This is the ultimate magnification.
