細粉 對手沖萃取的影響 Fine Powder’s Effect on Pour Over Coffee’s Extraction

咖啡豆研磨成粉,通常會同時產生不同大小粒徑的粉粒( 細粉),其中,細粉的優點,可增加咖啡的醇厚度(body),但若沖煮手法沒掌握好,過程中移動到濾杯底部(細粉遷移),淤積形成一片緻密層,則會截斷流動,易泡出苦澀的咖啡。

Grinding coffee beans usually produces powders of different sizes at the same time. Among them, the advantage of fine powder is that it can increase the body of coffee. However, if the brewing is not done properly, moved the bottom of the filter cup causing fine powder shifting, the siltation forms a dense layer and then it will cut off the water flow and easily brew bitter coffee.
