Grinding Evenly - We all want a full-bodied and balanced cup of coffee, but if the ground coffee is not grinded evenly, it will extract unevenly when brewing.
試想咖啡粉顆粒大小不均勻時,在沖泡時是同時被萃取的,大顆粒因為萃取比較慢、容易萃取不足,會比較容易出現尖銳的酸感;小顆粒因為萃取比較快、容易萃取過度,會容易出現不好的苦味。如此一來,很難均勻萃取每一顆咖啡粉,也就不容易萃取出風味飽滿又平衡的咖啡。試著均勻研磨咖啡粉再次試試吧。
Imagine that when the coffee powder particles is uneven, but they are extracted at the same time during brewing. The large particles are more likely to have a sharp sour taste because of the slow and under-extraction; the small particles are easy to be over-extracted because of the faster extraction. A bad bitter taste will easily appear. As a result, it is difficult to extract every coffee particle evenly, and it is not easy to extract full-flavored and balanced coffee. Try grinding the coffee grounds evenly and try again.
