Coffee Flavor
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.
Coffee originated in Ethiopia, Africa. The ideal regions for coffee cultivation are located between 25 degrees north and south latitude, including equatorial areas. Coffee-growing regions require an annual rainfall of 1,500–2,000 mm, aligning with the flowering cycle of coffee trees. The conditions for cultivating high-quality coffee are quite stringent, as both the harvesting methods and processing techniques significantly impact coffee quality.

In botanical classification, the coffee tree belongs to the Rubiaceae family and the Coffea genus. Coffee beans are the seeds of the coffee cherry, with three main species: Arabica (Coffea arabica), Robusta (Coffea canephora), and Liberica (Coffea liberica).
All specialty coffees worldwide come from the Arabica species. At Justin Coffee, we meticulously select various Arabica varieties to craft our coffee, and we print the bean variety information on our packaging. This allows you to understand the unique flavors of the coffee you are enjoying. While coffee flavors can vary due to numerous factors, at the very least, we can explore a small corner of the vast and diverse world of coffee beans together.
(Coffee Processes)
The coffee process refers to the transformation of ripe red coffee cherries into dried green coffee beans. Each processing method has its advantages and drawbacks, influenced by the natural environment and the specific needs of different coffee-producing regions. As a result, each region adopts the most suitable processing method for its conditions.
[Natural Process] - Sundried / Dry Processed
Freshly harvested coffee cherries are dried under the sun before the outer husk is removed. During this extended drying period, the beans absorb flavors from the fruit’s skin and pulp, enhancing the coffee’s sweetness and body while creating a distinctive aroma.
[Honey Process] - Pulped Natural / Semi-Dry Process
After removing the coffee cherry’s skin and pulp, the beans are left to dry with their sticky mucilage layer still intact. This mucilage retains a high concentration of sugars and acids, which is crucial to the honey process, producing flavors that lie between the characteristics of the natural and washed processes.
[Washed Process] - Wet Processed
Once the skin and pulp are removed, the beans undergo fermentation in water tanks to break down and remove the remaining mucilage. After fermentation, they are thoroughly washed with water. This method results in a coffee with a clean profile and vibrant acidity.
