咖啡太新鮮影響萃取怎麼辦 What to do if the coffee is too fresh and affects brewing
Coffee can breath! Do you know that freshly roasted coffee is continuously degassing? The more degassing it is, the more it will prevent the contact between coffee powder and water, and it is easy to brew watery coffee.
Aging process (Drinking coffee 3~5 days later after roast date)
Coffee bean aging process is to make freshly roasted coffee taste better. In addition to making the coffee flavor more fragrant, the aging process is to allow the coffee beans to slowly release of gases produced by roasting.
Before brewing, grind the powder and leave for a few minutes
拿到新鮮烘焙的咖啡豆時，發現咖啡的排氣太旺盛怎麼辦？我們可以增加咖啡與空氣的接觸面積，幫助它加快排氣，也就是在沖煮前，先磨粉等待，大約等3~5分鐘左右，再沖煮。一克的咖啡豆大約有8~9顆豆子(以 衣索比亞 蓋德奧 耶加雪菲 柯卡村 厭氧日曬 來舉例)，但經研磨成手沖顆粒後，每克大約有700個顆粒，可以想見與空間接觸的面積增加了許多倍。
What should I do when I get the freshly roasted coffee beans and find that the coffee degassing too much? We can increase the contact area between the coffee and the air to help it degassing faster. Therefore, you can grind the coffee beans and wait for about 3 to 5 minutes before brewing. There are about 8 to 9 beans per gram of coffee beans (take the Ethiopia Gediyo Yirgacheffe Koke Anearobic G1 Natural as an example), but after being ground into pour-over coffee powder, there are about 700 particles per gram. For each particle, it is easy to see that the area in contact with the space increases many times.
As we have mentioned above, increasing the contact area between coffee and air to speed up degassing is to increase the contact between coffee powder and water and the extraction rate. However, because the aroma is still slowly transforming, it is best to drink it after aging process. Justin Coffee recommend aging process is 3 to 5 days after roasting.
