If you don't have coffee equipment at home, but want to drink coffee, what to do? The following is to share how to use the simple equipment at home, through the immersion brewing method, to start your coffee life easily.

近來流行的手沖咖啡為「濾泡式」萃取法,在呈現豐富的香氣與風味之外、層次感較佳,在沖煮過程需要較熟練的手法。新手入門,如果不想購入器具,又想淺嚐莊園咖啡的美味,推薦使用簡單版浸泡式手法,也能沖出一杯好咖啡,類似泡茶般的浸泡式,來代替手沖萃取,那就跟著我們開始吧。
The recently popular pour-over coffee is the "filter" extraction method. In addition to presenting a rich aroma and flavor, it has a better layering and requires more skilled techniques in the brewing process. For beginners, if you don’t want to buy equipment, but want to taste the deliciousness of estate coffee, it is recommended to use the simple immersion brewing method, which can also brew a good cup of coffee, similar to brewing tea, instead of pour-over extraction. 浸泡式步驟說明

Immersion brewing steps:

器具
咖啡粉:手沖刻度粗細
杯或壺:二個,一個浸泡咖啡,另一個架上濾網接咖啡
濾網:過濾咖啡渣用
[如煮水餃的濾網、泡茶濾網、豆漿濾袋…等皆可,孔徑越小過濾的越乾淨,喝起來越不易喝到咖啡渣,能用咖啡濾紙最佳。]
湯匙:混合攪拌咖啡粉與熱水
計時器:浸泡時間計時
電子秤:粉水比例秤量

Equipment

- Coffee powder: pour-over brewing grind size

- Cups or pots: two, one for brewing coffee and the other for coffee

- Filter: For filtering coffee grounds

[Such as a filter for boiled dumplings, a tea filter, a soymilk filter bag, etc., the smaller the pore size, the cleaner the filter, and the less likely it is to drink coffee grounds. It is best to use coffee filter paper.]

- Spoon: mix and stir coffee powder with hot water

- Timer: Immersion time timer

- Electronic scale: weighing powder-water ratio

沖煮參數
- 水溫:90度 [85~95度適合咖啡沖煮]
- 粉水比:1:15
- 浸泡時間 2分30秒

Brewing parameters

- Water temperature: 90°C [85-95°C is suitable for coffee brewing]

- Powder to water ratio: 1:15

- Immersion time 2 minutes 30 seconds

沖泡步驟: [ 以1-2人份為例,20g粉,注入約300g的水 ]
1.將咖啡粉20g放入杯中
2.倒入90度熱水300g,咖啡粉吸水後會浮在杯內上緣,如同手沖之悶蒸狀態。
3.1分鐘或1分30秒後,以湯匙攪動杯內上緣的粉層,咖啡粉會沉浸在水中。
4.浸泡時間達2分30秒時,倒入另一個架好濾網的杯中,完成。

Brewing steps: [Take 1-2 servings as an example, 20g powder, 300g water]

1. Put 20g of coffee powder into the cup

2. Pour 300g of 90-degree hot water. After the coffee powder absorbs water, it will float on the upper edge of the cup, just like bloom of pour-over coffee brewing.

3. After 1 minute or 1.5 minutes, stir the powder layer on the inner upper edge of the cup with a spoon, and the coffee powder will be immersed in the water.

4. When the immersion time reaches 2.5 minutes, pour it into another cup with a filter and then it’s done.

小提醒
※ 可依喜好濃度調整粉水比,水少較濃,水多較淡。
※ 可依喜好風味改變時間,喜歡濃一點可延長時間,不喜歡太多雜味與苦味的話、時間可少一點。
※ 若濾網空隙太大,過濾出的咖啡液,裡面還含有許多咖啡細渣,咖啡粉會持續浸在熱水中,易導致雜味產生,因此越細的過濾器,口感和風味較佳。

Tips

The powder to water ratio can be adjusted according to the preferred strength concentration, the less water is stronger, and the more water is lighter.

The time can be changed according to the flavor you like. If you like a stronger flavor, you can extend the time. If you don’t like too much off-flavor and bitterness, you can use less time.

If the filter screen gap is too large, the filtered coffee liquid still contains a lot of fine coffee grounds, and the coffee powder will continue to be soaked in hot water, which is easy to cause unwanted flavors. Therefore, the finer the filter, the better the taste and flavor.

咖啡萃取手法百百種,今天分享的「浸泡式」手法,也就是將咖啡粉浸泡在熱水中,在適當水溫與時間下萃取咖啡,將咖啡粉過濾後享用。浸泡式萃取出的咖啡,較容易帶出甜度與厚實口感,風味均衡,喉韻十足,沖煮過程較不需要留意太多細節,沖煮結果穩定,但此方法也易因過度萃取產生苦澀感。
There are hundreds of coffee brewing methods. The “immersion” method shared today is to immerse the coffee powder in hot water, extract the coffee under the appropriate water temperature and time, filter the coffee grounds and enjoy it. The coffee brewed by immersion method is easier to bring out the sweetness and body, the flavor is balanced, the aftertaste is full, no need to pay too much attention to details during the brewing process, and the brewing result is stable, but this method is also easy to have bitterness due to excessive brewing.

反之,「濾泡式」也就是手沖萃取,可獲得較乾淨的口感、具風味層次及明亮酸質等,是不同特色感受。咖啡風味因應各種因素的變化,產生不同的風味、口感、香氣、醇度,許多人喜愛這種驚喜的呈現與挑戰,自家沖咖啡的樂趣就在於此,您說是不是呢?

新手入門不必花大錢,這樣簡單的咖啡萃取法,也能為生活帶來樂趣。若沒有器具,想試試這樣的手法,可於購買咖啡豆時,備註註明「代磨粉」,但研磨後的咖啡粉跟空氣接觸率放大,在磨豆的同時,香氣也會開始發散,隨著時間散失,因此建議自己磨豆最佳,把咖啡最珍貴的香氣留給自己吧。
