依咖啡 粉層 厚薄來調整注水量

濾杯依形狀不同, 粉層的厚薄分佈也有所不同

濾杯內咖啡粉分佈有較厚的部份,也有較薄的部份,手沖注水繞圈時,依厚薄來控制注水量。
Depending on the shape of the filter cup, the thickness distribtion of cfee ground is also different. There are thicker parts and thinner parts in the distribution of coffee powder in the filter cup. When pouring water in circles, control the amount of water injected according to the thickness.

以錐形濾杯來說,中央粉層較邊緣厚,需給予較多水量,邊緣則給予較少水量,以達均衡萃取。若皆以相同的水量來注水,邊緣容易過度萃取。
For a conical filter cup, the ground in the center is thicker than the edge, so more water needs to be given, while less water is given to the edge to achieve a balanced extraction. If all are filled with the same amount of water, the edges are prone to over-extraction.
