Does pour-over iced coffee have a coffee-to-water ratio?

Yes, we have experimented with different coffee-to-water ratios and found that lower ratios result in a bolder and more distinctive taste. Additionally, when using lightly roasted beans that showcase regional flavor characteristics, the sweetness increases, and the iced coffee becomes sweeter than acidic, with rich floral and fruity notes.

 

通常淺焙豆帶有更多地域風味的花果香,但容易伴隨明亮的酸質,這是淺焙豆的特色,但在手沖冰咖啡時,反而可以降低酸感、增加甜感;主要是萃取率與濃度的搭配,萃取前段可強化地域風味中的花果香,再用更多的咖啡粉增加濃度。

Lightly roasted beans often possess floral and fruity flavors that highlight their regional characteristics, but they may also have a bright acidity. However, when making pour-over iced coffee, you can reduce the acidity and increase the sweetness. This is achieved by adjusting the extraction rate and concentration. By emphasizing the floral and fruity notes during the initial extraction and using a higher amount of coffee grounds to increase the concentration, you can achieve a delightful balance.

最佳手沖冰咖啡比例
1. 咖啡粉30克(手沖研磨粗細度)
2. 冰塊150克
3. 熱水87度180克
4. 時間2分30秒(含悶蒸30秒)

 

The ideal ratio for pour-over iced coffee:

1. 30g of coffee grounds (coarsely ground for pour-over)

2. 150g of ice cubes

3. 180g of hot water at 87℃

4. Brew time of 2 minutes and 30 seconds (including a 30-second blooming)

咖啡30克:180克熱水+150克冰塊
總時間2分30秒(含悶蒸)

 喝起來: 葡萄酒香 玫瑰花香濃 啜飲如同冰滴濃郁 餘韻花香伴隨水果酒香綿長

Experimental Parameters - 4 (Optimal)

Coffee: 30g

Water: 180g hot water + 150g ice cubes

Total time: 2 minutes and 30 seconds (including blooming)

Taste: Wine aroma, intense rose fragrance, velvety and rich like cold drip, floral aftertaste with fruit wine aroma lingering


以上述4種比例可知,萃取時間不宜過久,以2分30秒(含悶蒸)為佳,選用淺焙豆時以30克咖啡為佳,喝起來的風味最豐富飽滿、口感濃郁香甜、餘韻花果香綿長。研磨粗細度建議以熱手沖的刻度即可,雖然磨細一點可增加萃取率,但容易帶苦感;熱水溫度建議也以熱手沖的溫度即可;上述方法只要改變粉水比,放入比例足夠的冰塊,即可帶出一杯好喝的冰手沖咖啡!讓自己與朋友一直續杯的夏天飲品,快動手試看看!

When using lightly roasted beans, a coffee-to-water ratio of 30g is recommended for a rich and full-bodied flavor, with a sweet and lingering floral aftertaste. The grind size should be adjusted to the scale for hot pour-over coffee. Although grinding finer can increase extraction rate, it may lead to bitterness. The water temperature should also follow the temperature for hot pour-over coffee. By simply adjusting the coffee-to-water ratio and adding enough ice cubes, you can create a delicious cup of pour-over iced coffee.
