手沖冰咖啡 Pour-over Iced Coffee

手沖冰咖啡 - 冰塊的用量,是原本熱水沖泡預計出來的咖啡液的一半的重量,比如說,20克粉、原本要沖300克的咖啡液,就用150克的冰塊、沖150~200克的咖啡液就好。

Pour-over iced coffee - The amount of ice used should be half the weight of the expected hot water-brewed coffee. For example, if using 20g of coffee grounds to make 300g of coffee, use 150g of ice to brew 150-200g of coffee.

 

然後,水注愈小愈好、時間愈長愈好,因為要沖出來的量已經減半了、就要想辦法以增加時間、來增加萃取率。

For the brewing process, a slower water drip and longer extraction time is better since the amount of coffee to be brewed has been halved. This will increase the extraction rate.
