焙度與研磨粗細 Roasting Degree and Grinding Size
焙度與研磨粗細沖煮咖啡前,可依個人喜好來決定研磨粗細度,並依焙度的深淺來調整。深焙豆子的膨脹率大、密度較低 、萃取率較高,這時候可用略粗的研磨,可以減少過萃的乾澀及苦感。反之,淺焙豆子的膨脹率小、密度 較高、萃取率較低,可用略細的研磨,增加萃取率減少酸感及適度的增加甜感。
Before brewing coffee, you can choose the grinding size according to your personal preference, and adjust it according to the roasting degree. Dark roasted beans have a large expansion rate, low density, and high extraction rate. At this time, a slightly coarse grind can be used to reduce the dryness and bitterness of over-extraction. On the contrary, light roasted beans have low expansion rate, high density, and low extraction rate. You can use a slightly finer grind to increase the extraction rate, reduce the sourness and moderately increase the sweetness.
