在家用小鍋子煮濃縮咖啡,做好喝冰拿鐵!咖啡店是透過義式咖啡機,以高壓高溫萃取濃縮咖啡;我們是用瓦斯爐「煮」的方式,以低粉水比、較長時間、萃取出濃度較高的咖啡液;再加入燕麥奶,做成簡單版卻好喝的燕麥奶拿鐵。
Brew espresso in a small pot at home and drink iced latte! Coffee shops use espresso machines to extract espresso coffee at high pressure and high temperature. We use a gas stove to "cook" the coffee with a low powder-to-water ratio and a long time to extract a high-concentration coffee liquid, then add oat milk to make a simple but delicious oat milk latte.

步驟一:濃縮咖啡製作

器材
- 電子秤:粉水比例秤量
- 計時器:時間計時
- 瓦斯爐/電磁爐:提供熱源
- 鍋子:煮咖啡用
- 濾網:過濾咖啡渣用
[如煮水餃的濾網等皆可,孔徑越小越不易喝到咖啡渣]
- 杯或壺:架上濾網接咖啡
Equipment
- Electronic scale: powder water ratio weighing
- Timer: time counting
- Gas/Induction Cooker: provide heat source
- Pot: for making coffee
- Filter: for filtering coffee grounds
[For example, a filter for cooking dumplings, etc., the smaller the aperture, the less likely it is to drink coffee grounds]
- Cup or jug: hold coffee with the filter on the rack
煮咖啡參數 (約1人份)
- 咖啡粉:20克 (義式配方)
- 咖啡粉研磨度:研磨度-細 (刻度#3)
以小富士、小飛馬為例-較手沖刻度再細一點
- 熱水(小火慢煮的滾水):120克
- 時間:煮2分30秒
- 濾出40克咖啡液
Coffee parameters (about 1 serving)
- Coffee powder: 20g (Espresso formula)
- Coffee Grinding Size: Grinding Size - Fine (Scale #3)
Take Little Fuji and Little Feima as examples - the scale is a little smaller than pour over
- Hot water (boiling water on low heat): 120g
- Time: Cook for 2 minutes and 30 seconds
- Strain out 40g of coffee liquid
濃縮咖啡製作步驟
1. 鍋內放入熱水120克,置於瓦斯爐上,小火(旋鈕約11點方向)加熱至滾。(放入的熱水越接近滾水、越不易在滾的過程蒸發掉,不然水會不夠多。)
2. 倒入咖啡粉20克開始計時,適時用湯匙拌勻。(火大時,咖啡會溢滿出來)
3. 煮至2分30秒後停火,倒入架好濾網的杯中將濃縮咖啡液濾出,完成。
※ 約略得到40克的濃縮咖啡液;如果大於或小於這個重量,下回再調整火力,即使是小火、也是可調大小。
Espresso making steps
1. Put 120g of hot water in the pot, put it on the gas stove, and heat it on a low heat (turning the knob to 11 o'clock) until it boils. (The closer the hot water is to boiling water, the harder it is to evaporate during the boiling process, otherwise the water will not be enough.)
2. Pour in 20g of coffee powder and start timing and mix well with a spoon. (When the fire is high, the coffee will overflow)
3. After boiling for 2 minutes and 30 seconds, turn off the heat, pour the espresso liquid into a cup with a filter, and finish.
※ About 40g of espresso liquid is obtained; if it is greater or less than this weight, adjust the firepower next time, even if it is a small fire, it can be adjusted.
步驟二:加入燕麥奶

- 剛煮好的濃縮咖啡液 40g
- Oatly咖啡師燕麥奶 160g
- 冰塊80克
Materials
- Freshly brewed espresso liquid 40g
- Oatly Barista Oat Milk 160g
- Ice cubes 80g
步驟
將濃縮咖啡、冰塊、燕麥奶混合,即完成簡單版卻好喝的冰燕麥奶拿鐵。

※ 不同的咖啡豆、烘焙度,風味呈現與濃度會有不同,可依照個人口味調整燕麥奶與冰塊的量,燕麥奶與冰塊量少,咖啡風味強;燕麥奶與冰塊量增加,咖啡風味更趨柔和。

好喝的燕麥奶拿鐵,咖啡豆是其中影響風味的因素之一,在單品豆的選擇,若習慣濃醇口感,可選擇焙度為中焙以上的曼特寧咖啡豆;若喜歡具有果香風味,可選擇淺中焙的衣索比亞、巴拿馬…等風味明確獨具特色的咖啡豆。由於製作拿鐵咖啡,咖啡液的香氣需要更濃郁才行,因此建議採用萃取率較高的焙度,像是淺中焙以上的焙度,會更為合適。
