手沖時間 Brewing Time for Pour-Over Coffee
適合手沖咖啡的時間,通常會是在2分30秒左右,含悶蒸的時間。
少於這個時間會萃取出較前段風味的咖啡、 多於這個時間容易萃取出較不好喝的可溶性物質。時間短萃取率較低、時間長萃取率較高。再搭配烘焙淺或深的咖啡來調整時間或水溫,品嚐不同細緻風味和口感。
The optimal brewing time for pour-over coffee is usually around 2 minutes and 30 seconds, including the blooming time. Less than this time will extract coffee with flavors that are more front-loaded, while more than this time may extract soluble materials that are less desirable. A shorter brewing time will result in a lower extraction rate, while a longer brewing time will result in a higher extraction rate. When combined with coffee beans that are roasted light or dark, adjusting the brewing time or water temperature can produce different delicate flavors and mouthfeel.
