【水洗法】Washed / Wet Processed
亦被稱為濕式加工處理法,在乾燥之前,所有的咖啡果實都會被去除果皮及果肉後,在發酵槽內泡水發酵,以清除殘留在種子上的果膠黏膜,接著用水清洗,並以陽光或機器乾燥。
The Washed Process, also known as Wet Processing, involves removing all coffee cherry layers before drying. After depulping, the beans are fermented in water to break down and remove the remaining mucilage, followed by thorough washing. The beans are then dried using sunlight or mechanical dryers.
水洗處理法比日曬處理法具有更乾淨、更清脆的口感,醇厚度相較日曬法來說較輕,通常有更明亮的風味表現,有著精品咖啡必備的豐富酸質,一樣有水果調性的風味,而且通常更容易區分。
Compared to the Natural Process, the Washed Process results in a cleaner, crisper flavor profile with a lighter body. It typically produces brighter acidity and distinct fruit notes, making it a preferred method for specialty coffee.
