水溫的重要 The Importance of Water Temperature

有沒有一個水溫可以萬用,如果不想嚐試隨水溫不同、而有不同風味的樂趣的話,可以都只用一個水溫;或者,用來測試每一批、每一鍋咖啡的品質時,可以都只用一個水溫,像小編最常用來做沖煮測試的水溫是85度C。

Is there a universal water temperature that can be used for all types of coffee? If you don't want to experiment with the different flavors that come with different water temperatures, you can use the same temperature for all batches. Alternatively, when testing the quality of each batch or each pot of coffee, you can use the same water temperature. For example, the temperature that I most often use for brewing tests is 85°C.

 

水溫很重要,最好有一個溫度計,即使是將燒開的水倒入手沖壺中,才會知道溫度多少;或是飲水機雖然顯示100度、但真正倒入手沖壺時、才會確切知道水溫。低於70度的水溫、萃取率偏低、如果拿它來沖煮淺焙咖啡、酸質強烈、甜感不佳、沒有厚度;如果拿85~90度之間的水來沖煮淺焙咖啡、酸質愉悅、甜感佳、風味較豐富。試著確切改變水溫,來品嚐變化莫測的咖啡風味吧。

Water temperature is very important, and it's best to use a thermometer to know the exact temperature, even if you're pouring boiling water into a pour-over kettle. Or, if you're using a water dispenser that displays 100°C, you'll only know the actual temperature when you pour it into the pour-over kettle. Water temperature below 70°C will result in low extraction rates. If used to brew light roasted coffee, it will produce strong acidity, poor sweetness, and no mellowness. If you use water between 85-90°C to brew light roasted coffee, it will have pleasant acidity, good sweetness, and a richer flavor. Try changing the water temperature to taste the unpredictable changes in coffee flavor.
