Where does the flavor in coffee come from? It originates from the coffee beans themselves, specifically during the roasting process when various aroma compounds are formed through thermal degradation, known as the Maillard reaction. This particular flavor is more commonly found in Ethiopian washed beans and is more pronounced when lightly roasted.
