When we buy the coffee beans with floral flavor, and we can smell the sweet floral fragrance while grinding, but can’t get the floral aroma after brewing. What happened?
Floral aroma is a softer flavor in coffee flavor, a more delicate taste, and it is easier to volatile, we need to make the coffee a little stronger to taste it. Often, you can smell the floral aroma when you grind the beans, but you can't taste the floral aroma when you drink it. From time to time, we can change the strength-concentration of the coffee and extract the floral part, reducing the flavor of the mellow part.
Floral aroma is a relatively delicate flavor, and a delicate flavor is easily overshadowed by a strong flavor. The delicate flavors are more in the first part of the extraction; the stronger flavors are more in the latter part of the extraction. When we want to drink a little more floral aroma, try to extract a little more of the flavor in the front part, so that the flavor is concentrated in this part and reduce the interference of strong flavor, and we will taste more floral aroma.
If we usually use 90~95°C of hot water to brew, then we can try to brew with 80~85°C to extract a little more flavor in the front section; at the same time, if we usually use the ratio of powder to water 1:15, then we can try the powder-water ratio of 1:12, which can concentrate the flavor and make the floral flavor more obvious.
