沖濾掛也需要悶蒸嗎?可以放在飲水機下直接沖嗎?雖然濾掛方便,隨意沖也能及格,但掌握萃取的小技巧,會讓咖啡更香醇好喝喔。

手沖咖啡的儀式感,是咖啡愛好者嚮往之日常;濾掛咖啡的沖泡方式其實也是手沖咖啡,就是磨粉的動作由我們做好,並以充氮氣方式封存磨粉後的香醇,讓撕開濾掛咖啡就如同現磨。手沖咖啡在磨粉後,會進行悶蒸,是讓咖啡粉同步被溼潤,並形成一個適合濾滴的狀態,讓咖啡可以均勻的被萃取;所以在濾掛的沖泡中,悶蒸是相同重要。

The sense of ritual to brew pour-over coffee is the daily life of coffee lovers. The brewing method of drip coffee is actually the pour-over coffee. The coffee bean grinding action has done already and the coffee aroma after grinding is sealed by nitrogen filling. Thus, you open the drip coffee bag as if it was freshly ground. After the pour-over coffee bean is grounded, it will be blooming, so that the coffee powder will be moistened at the same time, and form a state suitable for dripping, so that the coffee can be extracted evenly; so in the brewing of the drip coffee, blooming is the equally important.

 

悶蒸的最適粉水比約略為給水1.5倍至2倍的熱水;但濾掛因為空間受限,所以悶蒸粉水比會倒入2至3倍的熱水;在悶蒸的時間上,約用30秒,讓咖啡粉同步溼潤。接著繼續倒入熱水至150c.c至180c.c,整個過程約略在2分30秒左右,可以享用一杯香醇咖啡。

The ideal powder-water ratio for blooming is about 1:1.5 to 1:2. However due to the limited space of the drip bag, 2-3 times the hot water will be poured into and blooming about 30 seconds to make the coffee grounds moist and then continue to pour 150c.c to 180c.c hot water. The whole process takes about 2 minutes and 30 seconds, and you can enjoy a cup of fragrant coffee.

 

適合沖濾掛的水溫在85至95度之間,如果是淺焙咖啡會建議用高一點的水溫,例如95度熱水。所以在方便的前提下,直接在飲水機下以熱水沖泡,也是很適合、很方便的,請記得也要悶蒸、水量要適當、時間要適當等。

The water temperature suitable for brewing is between 85°C and 95°C. If it is light roasted coffee, it is recommended to use a higher water temperature, such as 95 degrees hot water. Therefore, just for convenience, it is also very suitable and convenient to brew with hot water directly under the water dispenser. 至於手冲常被討論到的手法,在濾掛沖泡中,就比較沒有發揮的空間;雖然JC咖啡的老闆也是會用不斷水法來沖濾掛,用小小水柱、微微繞圈、注入180CC不間斷的熱水後、在2分30秒滴濾完成,倒出約略為160CC的咖啡液。
