酒香日曬 Winey Natural

酒香日曬 處理法並不是在生豆處理過程加入紅酒,而是它的發酵方法類似紅酒的發酵方式,處理步驟類似 日曬處理法 ,只是發酵時間更長。咖啡農夫會挑選成熟的 咖啡櫻桃 ,放入袋中,待咖啡果實變成黑色並形成葡萄酒的特徵,然後放在棚架上並使其乾燥至含水率11%左右。過程中,讓咖啡中的酶沉澱並達到平衡,需要大約四週的時間讓咖啡發酵,如此增加了咖啡中的甜感、層次感,風味類似紅酒的發酵風味和特別增強的甜度,尤其是用蜜處理中焙的方式。

The winey natural method does not add red wine during the processing of green beans, but its fermentation method is similar to that of red wine, and the processing steps are similar to the natural method, but the fermentation time is longer. Coffee farmers pick ripe coffee cherries, put them in bags, let the berries turn black and develop the character of the wine, then put them on trellises and dry them to about 11% moisture content. During the process, the enzymes in the coffee are allowed to settle and reach equilibrium, and it takes about four weeks for the coffee to ferment, which increases the sweetness and structures in the coffee, and the flavor is similar to the fermentation flavor of red wine and the especially enhanced sweetness, especially with the way honey treatment is processed for medium roasting.

 

【日曬法】Natural / Sundried / Dry Processed
又稱自然乾燥法、非水洗式處理法,將採集下來的咖啡果實放在陽光下曬乾後去殼,在長時間的曝曬過程中吸收了果皮及果肉的味道,而讓咖啡的甜度、醇厚度更飽滿,易製造出特有香氣。

Also known as natural drying method and non-washing treatment method, the collected coffee berries are dried in the sun and then peeled off. During the long-term exposure process, the flavor of the peel and pulp is absorbed, and the sweetness of the coffee and body is fuller, easy to create a unique aroma.

 

酒香日曬處理法,是在生豆處理過程中,發酵方法和程度類似於紅酒的發酵,處理步驟類似於日曬處理法,只是發酵時間更長。

The winey natural method is in the process of green bean processing. The fermentation method and degree are similar to that of red wine. The processing steps are similar to the natural method, but the fermentation time is longer.

 

步驟如下:

1、咖啡農採收成熟的紅果後,直接放在日曬場,以陽光曝曬乾燥;

2、曝曬過程中會不斷檢測其發酵程度;

3、數日後曬至乾燥;

4、將乾燥後的生豆用去殼機去除果肉和果皮,取出生豆。

1. After the coffee farmers harvest the ripe red cherries, they are directly placed in the sun drying field and dried in the sun

2. The degree of fermentation will be continuously detected during the exposure process

3. Dry in the sun after a few days

4. Use a sheller to remove the pulp and peel of the dried green beans and take out the green beans.

 

優點:酒香咖啡豆比普通日曬的咖啡豆成熟紅果率更高,發酵時間更長,因此增加了咖啡中的甜感,層次感較為豐富,口感類似紅酒的發酵風味(萊姆酒)。

Advantages: Compared with ordinary natural coffee beans, winey natural coffee beans have a higher rate of mature red fruit and longer fermentation time, thus increasing the sweetness in coffee, rich in structures, and taste similar to the fermented flavor of red wine (lime).

 

缺點:這種處理方式耗費人工和時間,因此無法批量生產,所以一般用於處理一些較為昂貴的咖啡豆。

Disadvantages: This processing method is labor-intensive and time-consuming, so it cannot be mass-produced, so it is generally used to process some more expensive coffee beans.

 

黑葡萄酒的過程

The process of black wine

 

挑選成熟的紅櫻桃,然後農夫將咖啡放入約40公斤的聚苯乙烯袋中。 然後將咖啡變成黑色並形成葡萄酒的特徵。 然後將咖啡放在升高的床上並使其乾燥至11%的水分。

Farmers pick ripe red cherries and put into about 40 kilograms of polystyrene bags. The coffee is then blackened and characterized like the wine. The coffee is then placed on a raised bed and allowed to dry to 11% moisture.

The process of resting the coffee, allowing the enzymes to settle and equilibrate, takes about four weeks.
