其實不是「哪一杯最好喝?」也不是「為什麼這杯這麼貴?」
真正讓咖啡師突然停頓三秒的,通常是:
「這杯喝起來像檸檬,是不是有加檸檬汁?」
「你說有水蜜桃風味,那裡面真的有放水蜜桃嗎?」
「日曬咖啡,是拿去曬太陽就好了嗎?」
「淺焙是不是比較不熟?」
「咖啡豆可以放冰箱嗎?」
「這包豆子放了一年,還可以喝嗎?」
「為什麼我照你的方法沖,喝起來完全不一樣?」
這些問題有的簡單到讓咖啡師不知道該從哪裡開始解釋,有的複雜到可能要從咖啡樹、品種、海拔、處理法,一路講到烘焙曲線、水質、研磨粒徑與萃取率。
更困難的是,有些問題看起來只有一句,背後卻可能要回答半小時。

It isn't "Which cup is the best?" nor is it "Why is this cup so expensive?"
What actually makes a barista pause for three seconds are usually questions like:
"This tastes like lemon, did you add lemon juice to it?"
"You said it has peach notes, does it actually have peaches in it?"
"Is natural processed coffee just coffee left out to dry in the sun?"
"Does light roast mean it's undercooked?"
"Can I store coffee beans in the fridge?"
"This bag of beans has been sitting for a year, is it still drinkable?"
"Why does it taste completely different when I brew it using your exact method?"
Some of these questions are so simple that baristas don't know where to begin explaining. Others are so complex that the answer might have to span everything from coffee trees, varieties, elevation, and processing methods all the way to roast profiles, water quality, grind size distribution, and extraction yield.
Even trickier are the questions that consist of just one sentence on the surface, but might take half an hour to truly answer.

「這支咖啡酸嗎?」
這大概是咖啡店裡最常出現,也最難回答的問題之一。

咖啡師的日常,就是在這些看似簡單的問題裡,不斷尋找彼此能理解的語言。
For instance, when a customer asks:
"Is this coffee sour?"
This is probably one of the most common and most difficult questions in a coffee shop.
That's because some people perceive the bright acidity of citrus as "sour," while others think only the tartness of plums counts as "sour." Some love a soft, peachy sweet-acid balance, but cannot stand a sharp, lemon-like acidity. If a barista says it is "mildly acidic," the customer might drink it with a furrowed brow. Yet if the barista says "not very acidic," another customer might find the exact same cup extraordinarily bright.
So, baristas have learned not to rush into answering whether it is sour or not, but instead to ask back:
"Do you usually prefer full-bodied, bittersweet notes, or floral and fruity tones?"
A barista's daily life is spent continuously searching for a shared language within these seemingly simple questions.

我們只能說,價格可能反映品種、產量、莊園、競標、處理難度與市場稀有性,但好不好喝,最後仍然是個人的感受。

這時咖啡師不會失望。
因為咖啡沒有標準答案。昂貴的咖啡不一定適合每個人,得獎的咖啡也不需要每個人都喜歡。真正重要的,是慢慢找到自己願意一喝再喝的味道。
Someone asks: "Are more expensive coffee beans always better?"
We can only say that price may reflect the variety, yield, estate, auction status, processing difficulty, and market rarity, but whether it tastes good ultimately remains a matter of personal preference.
Someone asks: "Is Geisha always the best?"
Not necessarily. Some fall in love the moment they taste jasmine, peach, and bergamot; others take a sip and softly remark, "I still prefer something with a stronger chocolate flavor."
When that happens, the barista isn't disappointed.
Because there are no standard answers in coffee. Expensive coffee isn't necessarily right for everyone, and award-winning coffee doesn't need to be loved by all. What truly matters is gradually finding the flavors you are willing to enjoy again and again.

因為咖啡每天都在變。
烘焙後的天數、保存方式、室內溫度、濕度、磨豆機狀態、水溫、注水速度,甚至沖煮者當天的心情與手感,都可能讓風味產生差異。
有時候只是研磨刻度差了一點,水流快了幾秒,花香就變淡了;有時候水溫提高兩度,原本柔和的果酸突然明亮起來。

"Why does the same bag of beans taste different today compared to yesterday?"
Because coffee changes every single day.
Days post-roast, storage conditions, room temperature, humidity, grinder state, water temperature, pour rate, and even the brewer's mood and feel on that given day can all cause variations in flavor.
Sometimes, a tiny difference in grind size or a flow rate just a few seconds faster can mute the floral notes. Other times, raising the water temperature by two degrees Celsius can suddenly make a soft fruit acidity vibrant and bright.
咖啡不是考試:咖啡師最怕你「沒有問題」
咖啡師每天做的事,看起來像是重複:秤豆、磨豆、注水、聞香、品飲。
但其實沒有任何兩杯咖啡完全相同。
開店十年,也遇過許多意想不到的問題。
「咖啡豆是不是豆類?可以像紅豆一樣煮嗎?」
「低咖啡因咖啡,是不是完全沒有咖啡因?」
「水洗咖啡,是不是用水洗得比較乾淨?」
「蜜處理有加蜂蜜嗎?」
「厭氧處理喝起來有酒香,喝了可以開車嗎?」
「咖啡放冷了變酸,是不是壞掉了?」
「手沖一定要順時針嗎?逆時針會不會不好喝?」
面對這些問題,咖啡師有時候會笑,但不是笑客人不懂。
因為我們自己剛開始接觸咖啡時,也曾經問過類似的問題。
也許今天能說出產區、品種、處理法的咖啡老饕,第一次喝單品咖啡時,也曾經懷疑:「黑咖啡裡怎麼可能有草莓味?」
也許現在會討論萃取率、TDS與粒徑分布的咖啡人,當年也只知道把咖啡粉放進濾杯,再把熱水倒下去。
每一個看似簡單的問題,都是一個人開始認識咖啡的入口。
咖啡師真正害怕的,或許不是客人問得太簡單,也不是問題太複雜。
最怕的反而是,客人明明有疑問,卻因為擔心自己不懂、不專業,而不敢開口。
咖啡不應該是一場考試。
不需要先背熟產區,不需要會分辨每一種花香,也不需要說出漂亮的風味詞,才有資格喝一杯好咖啡。
你可以只說:「這杯喝起來很舒服。」
也可以說:「我不知道是什麼味道,但我喜歡。」
這些都是真實而重要的品飲感受。
十年來,我們回答過從產地、品種、處理法、烘焙、沖煮、保存,到品味與價格的各種問題。有些問題一句話就能回答,有些問題講了十年,答案仍然持續改變。
但也正因為有人願意問,咖啡師才有機會重新思考,自己習以為常的知識,要如何用更簡單、更誠實的方式說明。
所以,下次你站在吧台前,突然想到一個有點奇怪的咖啡問題,儘管問吧。
因為此刻站在你身旁、能清楚說出咖啡風味的老饕,也許很多年前,曾經認真地問過咖啡師:
「請問這杯咖啡,真的沒有加水果嗎?」
What a barista does every day may look repetitive: weigh beans, grind, pour water, aroma check, taste.
Yet, no two cups of coffee are ever identical.
In ten years of running the shop, we have encountered many unexpected questions:
"Are coffee beans actually beans? Can you cook them like red beans?"
"Is decaf coffee completely free of caffeine?"
"Is washed coffee literally washed clean with water?"
"Does honey processing involve adding real honey?"
"Anaerobic processing tastes like wine—can I still drive after drinking it?"
"My coffee turned sour after cooling down—has it gone bad?"
"Do I have to pour in a clockwise motion for pour-over? Will counter-clockwise make it taste bad?"
Faced with these questions, baristas sometimes smile—but never to mock the customer's lack of knowledge.
Because back when we first got into coffee, we asked similar questions ourselves.
Perhaps the coffee connoisseur who can seamlessly discuss origins, varieties, and processing methods today once wondered during their first cup of single-origin coffee: “How can there possibly be a strawberry flavor in black coffee?”
Perhaps the coffee enthusiasts currently debating extraction yield, TDS, and particle size distribution were once people who simply put ground coffee into a filter cup and poured hot water over it.
Every seemingly simple question serves as an entryway for someone to begin understanding coffee.
What baristas truly fear might not be questions that are too simple, nor those that are too complex.
What they fear most, instead, is a customer who clearly has a question but hesitates to ask out of fear of appearing uninformed or unprofessional.
Coffee should never be an exam.
You don't need to memorize regions, master every floral nuance, or use fancy tasting notes just to earn the right to enjoy a good cup of coffee.
You can simply say: "This cup feels very comforting."
Or you can say: "I don't know what flavor this is, but I like it."
These are all genuine and meaningful tasting experiences.
Over the past ten years, we have answered all kinds of questions—spanning origins, varieties, processing methods, roasting, brewing, storage, taste preferences, and pricing. Some questions can be answered in a single sentence, while others have been discussed for a decade with answers that continue to evolve.
Yet it is precisely because people are willing to ask that baristas get the opportunity to rethink how to explain the knowledge they take for granted in a simpler, more honest way.
So, next time you are standing at the bar and a somewhat strange coffee question pops into your head, go ahead and ask.
Because the connoisseur standing next to you right now—who can clearly articulate every flavor note in their cup—might have seriously asked a barista many years ago:
"Excuse me... is there really no fruit added to this coffee?"
