“Do you have natural process coffee?” When choosing specialty coffee, some people prefer to start with their favorite processing method, which seems to be able to certain the favorite flavor profile. Natural? Washed? What is the difference between the two processing methods? There is honey processed too?
Most people's impression is that natural process has a sweeter taste and washed process has a more acidity flavor; natural has a fruity fragrance, while washed has a floral fragrance. Honey process is a compromise between the two.
Why is the natural process sweeter and washed process more acidity in our impressions? There are three main categories of coffee process, as follows:
It is the coffee cherry that is dried in the sun, absorbing the flavor of the peel and pulp during the exposure, making the coffee sweeter and mellow.
After removing the peel and pulp of the coffee cherry, fermentation in the fermentation tank removes pectin and washed with water. It has a rich acidity and a clean floral aroma.
It is a compromise between natural and washed process. After removing the skin and pulp from coffee cherry, retain part of the pulp and pectin, and dry it in the sun. The flavor is between natural and washed process.
In addition to the processing method, there are other factors that affect the flavor, including geography, coffee bean species, etc.
For example, African beans have a citrus tone, and Central American beans have a nutty tone. Therefore, the basic tonality of natural process African beans is fruity and citrus; washed African beans have floral and citrus aromas.
For example, the Geisha variety has floral and citrus notes; the Typica variety has lemon aromas; the Caturra variety has fruity aromas, and the Bourbon variety has caramel and chocolate flavors.
In terms of sweetness and acidity, coffee beans are actually the seeds of the fruit on the tree. The sweeter the fruit, the sweeter the coffee. Even the light roasted coffee has the original acidity, because of the good quality coffee bean’s sweetness is greater than acidity, so it will not feel very sour. Washed or natural process depends on the sweetness of the coffee. Basically, the higher the price, the sweeter coffee is.
