罕貝拉莊園 Hambela Estate

罕貝拉莊園位於衣索比亞古吉區,海拔高達2150公尺,莊園附近都是原始森林,在莊園內新開發的農地,也盡可能的保留原始森林的樣貌,與環境取得自然的平衡。莊園主為當地提供就業機會,包括70%以上的女性勞動力,並為當地小學提供贊助等。

The Hambela Estate is located in the Guji Zone of Ethiopia, at an impressive altitude of 2150 meters. The surrounding areas of the estate are pristine forests, and in the newly developed agricultural land within the estate, they strive to preserve the natural balance and appearance of the original forest. The estate provides employment opportunities for the local community, with over 70% of the workforce being women, and also sponsors local elementary schools.

 

罕貝拉的日曬處理,採用嚴格精緻的單層慢速乾燥,棚架上的櫻桃只鋪一層的厚度,乾燥日程控制在18天,單一層的堆疊提供咖啡櫻桃良好的對流與乾燥環境,讓咖啡櫻桃發展出最佳的風味。採用這樣的乾燥工藝,除了占空間、生產時間延長,還需要氣候配合,增加了生產風險與成本。

Hambela employs a meticulous and careful sun-drying process, utilizing a strict single-layer slow drying method. The cherries on the drying racks are spread in a single layer with controlled thickness, and the drying period is carefully regulated to last for 18 days. This single-layer stacking provides an ideal convection and drying environment for the coffee cherries, allowing them to develop their best flavors. However, this drying process requires ample space, prolongs production time, relies on favorable weather conditions, and adds to production risks and costs.
