在世界地球日這樣強調「保護地球、珍視自然資源」的日子裡,讓我們從一個日常動作-喝咖啡-重新認識什麼叫做「永續」,什麼叫做「對環境友善」。

在許多傳統的大規模咖啡種植區,過去為了提高產量,大量砍伐原生林、施用化肥與農藥,破壞了生態平衡。這種「單一作物農業模式」不但讓土地貧瘠,也加速了生物多樣性的流失。

而在精品咖啡的領域,這樣的模式正在被改變。越來越多農民選擇在樹蔭下自然栽種咖啡,讓咖啡樹與當地森林共生。這種方式不僅保留了原生植被與動物棲地,也讓咖啡風味更具層次,森林中的微氣候與豐富的生物多樣性,正是精品風味的隱形幕後推手。
Coffee Trees in the Forest: From Monoculture to Ecological Harmony
In many traditional large-scale coffee-growing regions, forests were once cleared to make way for monoculture plantations, driven by the goal of higher yields. These methods often relied heavily on chemical fertilizers and pesticides, disrupting local ecosystems. This "single-crop farming model" depleted the soil and accelerated biodiversity loss.

But the world of specialty coffee is shifting away from this approach. More and more farmers are now cultivating coffee under the natural shade of trees, allowing the coffee to grow in harmony with the surrounding forest. This method not only preserves native vegetation and wildlife habitats but also contributes to richer, more complex flavor profiles. The microclimates and biodiversity of these forests are the quiet heroes behind the unique taste of specialty coffee.

 

🌱 永續不靠標章,而靠關係

市面上有許多聲稱「永續」的標章,例如Rainforest Alliance(雨林聯盟)、Fair Trade(公平貿易)等,它們的設計本意是幫助消費者辨別對環境與農民友善的產品。然而,這些認證往往需要高額費用與繁瑣行政程序,對於許多資源有限的小農來說,是一種進入門檻,甚至可能排除真正實踐永續理念的咖啡農。

🌱 Sustainability Is Built on Relationships, Not Just Certifications

There are many sustainability certifications on the market—Rainforest Alliance, Fair Trade, and more—designed to help consumers identify environmentally and socially responsible products. But these certifications often come with high costs and complex administrative requirements that small-scale farmers may not be able to afford. Ironically, this can exclude the very farmers who are genuinely practicing sustainability.

That’s why, in the world of specialty coffee, more roasters and buyers are turning to Direct Trade—bypassing middlemen and certification systems to build long-term, transparent, and equitable relationships directly with farmers. Instead of relying on a certification, this model is built on trust, knowledge sharing, and fair compensation—allowing farmers to protect both their land and the quality of their coffee, in their own way.

Earth Day doesn’t just call for lifestyle changes—it reminds us to recognize the power of our everyday choices. When you choose a cup of specialty coffee that coexists with nature, you’re participating in a small yet meaningful act of sustainability. Here are three origin stories from forested regions that embody the role of the “guardian in your cup”:

 

📍 宏都拉斯・San Vicente處理廠:森林邊的合作平台
位於Santa Barbara地區的San Vicente處理廠,是宏都拉斯精品咖啡的關鍵推手。許多與其合作的小農雖然沒有任何標章認證,卻長年使用自然耕作、維持樹蔭與高海拔森林生態。San Vicente不僅是生豆處理與出口平台,更像是農民的支援中心,提供栽種技術、風味回饋與市場導向的建議。

透過與直接貿易商與烘豆師的長期直接合作,這些農民無需耗費大量資源申請認證,也能以實際行動維護生態與品質,真正實踐「沒有標章的永續」。​​​​​​​

📍Honduras – San Vicente Mill: A Collaborative Platform at the Forest’s Edge

Located in Santa Barbara, the San Vicente Mill has been instrumental in putting Honduran specialty coffee on the map. While many of its partner farmers don’t carry certifications, they’ve long practiced shade-grown, forest-friendly farming at high altitudes. More than just a processing and export hub, San Vicente serves as a support center for farmers—offering growing advice, sensory feedback, and market guidance.

Thanks to long-term Direct Trade relationships with importers and roasters, these farmers don’t need to spend resources on certifications to prove their sustainability—they live it through their practices and partnerships.

 

📍 哥斯大黎加・Brunca Rivense:山坡上的風味實驗室
位於哥斯大黎加南部的Brunca地區,Rivense處理廠由里瓦斯家族經營。這座位於丘陵與林地間的處理廠,採取低干擾、順應自然的蜜處理與日曬技術,與當地農民共同推廣環境友善的栽種方式。

雖無有機或雨林標章,他們卻以自然的方式尊重地形、氣候與土壤,不追求大量產出,而是聚焦於小規模、精緻、符合環境節奏的微批次生產。這讓森林得以保留,也讓消費者喝到更純淨、層次豐富的咖啡。​​​​​​​

📍 Costa Rica – Brunca Rivense: A Flavor Lab in the Hills

In the southern Brunca region of Costa Rica, the Rivense Mill is run by the Rivas family. Nestled between hills and woodlands, they focus on low-intervention, eco-conscious processing methods like honey and natural processing. They also work closely with local farmers to promote sustainable farming techniques.

Though their coffee doesn’t bear organic or rainforest labels, the Rivenses respect the natural terrain, climate, and soil. They prioritize quality over quantity, producing small, refined micro-lots that align with the rhythm of nature. Therefore, forests remain intact—and consumers get to enjoy purer, more constructures cups.

 

📍 衣索比亞・Gotiti:耶加雪菲林蔭下的風味寶藏
Gotiti是耶加雪菲地區著名的村落之一,位於高海拔的森林地帶。當地小農多以自然林蔭栽培,不施農藥、不破壞原生植被,與森林動植物共存。這些農民雖然無力取得國際認證,卻靠著傳統方法與對土地的敬重,生產出世界級的花香與柑橘風味。

與進口商或合作社建立關係的買家,不只購買咖啡,也參與守護森林生態系統的行動。這樣的「非標章永續」,或許不顯眼,但卻是最真實的永續力量。​​​​​​​

📍 Ethiopia – Gotiti: A Floral Treasure Beneath the Yirgacheffe Canopy

Gotiti is one of the renowned villages in Ethiopia’s high-altitude Yirgacheffe region. Here, most farmers grow coffee under natural forest shade, without pesticides or destruction of native flora. They coexist with the forest’s wildlife. These farmers may not hold global certifications, but they consistently produce world-class coffees bursting with floral and citrus notes, cultivating with traditional methods and deep respect for the land.

Buyers who work with cooperatives or directly with these farmers aren’t just sourcing beans—they’re investing in forest preservation. This kind of "non-certified sustainability" may fly under the radar, but it’s one of the most authentic expressions of environmental stewardship.
