Coffee Flavor
Coffee flavor is the result of various nutrients in green coffee beans breaking down into different aromatic molecular structures during roasting. This process creates a range of aromas that contribute to the overall flavor profile. High-quality coffee beans naturally possess rich aromas, which transform pleasantly at high, medium, and low temperatures, offering a delightful experience that is truly worth savoring.

Jamaica Blue Mountain Clydesdale Estate No.1 Washed
The world's most successfully marketed and highest-priced coffee comes from Jamaica's Blue Mountain Coffee. It is known for its sweet, smooth, rounded, full-bodied flavor, with a clean finish and a lingering aftertaste.
Blue Mountain Coffee refers to high-quality coffee grown in a specific region of the Blue Mountains located in eastern Jamaica. Surrounded by the Caribbean Sea, on sunny days, the sunlight reflects off the sparkling blue waters, casting a blue glow on the mountain peaks, hence the name. In 1953, the Jamaican government established the Coffee Industry Board (CIB) to regulate the quality of Blue Mountain Coffee. Before being exported, Jamaican coffee must pass the CIB’s stringent quality tests to receive the government-issued Certificate of Origin and officially carry the "Blue Mountain" name. Therefore, genuine Blue Mountain Coffee is legally authorized and certified for export.
In the Blue Mountain range, the ideal combination of high altitude, mineral-rich soil, gentle cloud cover, mountain shade, and ample sunlight creates perfect conditions for coffee cultivation. The cool climate, with significant temperature differences between day and night, extends the coffee maturation period, increasing the sugar content in the beans and enriching the coffee’s aroma and flavor.
It is important to note that not all coffee grown in the Blue Mountains qualifies as "Blue Mountain Coffee." Only coffee grown within the legally defined region and at altitudes between 915 meters and 1,675 meters can be officially labeled as Blue Mountain Coffee.

Not all coffee labeled as "Blue Mountain" on the market is truly authentic Blue Mountain Coffee:
◆ Jamaican Coffee is not the same as Blue Mountain Coffee
Only coffee grown in the legally defined region of the Blue Mountains in eastern Jamaica, at an altitude of 915–1,675 meters, qualifies as authentic Blue Mountain Coffee.
◆ Blue Mountain-Style Coffee is not the same as Blue Mountain Coffee
This is merely a blend designed to mimic the flavor profile of Blue Mountain Coffee, but it cannot compare to genuine Blue Mountain Coffee.

Amber Estate
Amber Estate is part of the Gold Cup company established in 2003 in Jamaica. It is a collaboration between Dr. Charles Lyn and a team of farmers from the legally designated Blue Mountain coffee-growing region. Fully ripened red cherries are harvested from the high-altitude areas of St. Thomas and St. Andrew and sent to the estate’s wet mill for initial processing. The first step includes pre-sorting to remove floating beans, followed by further processing at the Blue Mountain Coffee Processors Ltd. mill. Here, the beans undergo 100% sun-drying, an 8-week resting period, and a second round of grading based on bean size, density, color, and appearance. Finally, the beans are cupped to confirm flavor and quality.
All processes are completed under the guidance and supervision of the Jamaica Agricultural Commodities Regulatory Authority (JACRA). Every No.1 grade specification strictly adheres to Jamaica's highest green bean standards. The green beans' quality is particularly reflected in Amber Estate’s flagship brand. Only the highest-quality beans graded by the Blue Mountain Coffee Processors are selected for Amber Estate coffee.
Silver Hill Estate
Silver Hill Estate is one of the four coffee farms officially designated by the Jamaican government since 1953. Situated in a secluded area beneath majestic tropical rainforests, Silver Hill offers ideal conditions for growing coffee. The estate produces some of the world’s finest Jamaican Blue Mountain coffee beans, carefully selected and processed under the control of JACRA (formerly the Jamaica Coffee Industry Board).
Clydesdale Estate
Clydesdale Estate is the oldest coffee estate in the Blue Mountains, often referred to as the "Heart of the Blue Mountains". Founded in the 18th century by British settler Dr. McClarty, Clydesdale Estate was Jamaica's first commercial coffee plantation. Dr. McClarty recognized the value of the land during his initial visit to Jamaica and established the estate, which later became the center of Jamaica’s Blue Mountain coffee industry.
Due to the fame and high quality of its coffee, Clydesdale Estate attracted many farmers, who began cultivating coffee in the surrounding areas, creating what is now the Blue Mountain coffee region. The estate’s coffee mill and equipment have a unique historical significance, boasting a legacy of over 400 years. Clydesdale continues to supply some of the finest Blue Mountain coffee in the world, with its timeless flavor captivating coffee connoisseurs worldwide.

About Coffee Trees and Coffee Varieties
Botanically, coffee trees belong to the Rubiaceae family, genus Coffea, and are evergreen plants. Coffee beans are the seeds of coffee cherries, and there are three main species of coffee: Arabica (Coffea arabica), Robusta (Coffea canephora), and Liberica (Coffea liberica). These three species cannot interbreed to produce hybrids. The world’s specialty coffees come from the Arabica species, which has further evolved into various subspecies and cultivars through natural evolution, hybridization, and mutations.
The Typica variety of Arabica coffee is one of the closest to the original wild coffee species. Typica beans are slightly elongated, with a clean lemon-like acidity, a sweet aftertaste, and an elegant flavor profile. However, Typica plants are delicate, with low resistance to leaf rust and other diseases, making them difficult to grow. Their low yield further limits production. Some of the finest estate coffees in the world, such as Jamaica Blue Mountain, Sumatra Mandheling, and Hawaiian Kona, belong to the Typica variety.
In the market, many "Blue Mountain-style" coffee blends mimic the flavor of Blue Mountain by using beans like Mandheling or New Guinea, which share Typica characteristics, combined with low-acidity, sweet Brazilian beans. However, the mixed flavors of such blends cannot compare to the clean and balanced profile of Blue Mountain No.1. Blue Mountain No.1 achieves a richness in a light-medium roast that other beans typically only achieve in a dark roast. It offers a natural sweetness with a lingering and layered aftertaste that is unparalleled.
Coffee Processes
Coffee processing refers to the transformation of ripe red coffee cherries into dried green beans. Each processing method has its pros and cons, influenced by the natural environment and regional demands. As a result, different coffee-producing regions adopt methods best suited to their conditions. This batch uses the Washed Process.
Washed Process / Wet Processed
After removing the skin and pulp, the beans are fermented in water tanks to break down and remove the mucilage clinging to the parchment layer. The beans are then thoroughly washed. This process enhances one of the hallmarks of specialty coffee: a vibrant acidity.
