The Cerrado Mineiro region of Brazil is the largest savanna in South America, with a landscape that includes a mix of grasslands, scrublands, and forests. Since the 1960s, land use has been changing, and now over 40% is agricultural land, with over 40 years of coffee cultivation history. The Cerrado's flat farmland, coupled with expensive labor, makes mechanized harvesting and processing the primary method here. This increases production per unit area and allows for harvesting ripe cherries at the best time of the season. During the drying process, modern machinery is used for strict monitoring to ensure the coffee retains its most perfect and ultimate flavor characteristics. This is the key factor that makes Cerrado coffee so sweet.
The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation. Catuai
Catuai, the Arabica coffee variety, is a hybrid of Caturra and Mundo novo. Caturra is short and Mundo Novo is tall. Later, the improved height is more convenient for harvesting. The taste is sweet, the sweetness performance is similar to that of Cattura, and the sourness is less, which improves the shortcomings of bad taste and poor flavor, and has a good sense of balance.
Mundo Novo
The Arabica coffee variety Mundo Novo is a rare variety discovered in 1943 in Mineiros do Tiete, Sao Paulo, Brazil. It is a natural hybrid of the Brazilian Bourbon and Sumatran Typica varieties. Discovered in Brazil in the 1940s, it was named after the local place name. Mundo Novo (Portuguese for "New World") is widely cultivated due to its relatively high fruit yield, strong constitution, and good disease resistance.
Mundo Novo has a very special flavor. Unlike Bourbon, it has a floral aroma, rich floral and fruity fragrance, maple syrup sweetness, a hint of fruit acidity, and a beautiful cocoa flavor. The aftertaste is cocoa and fruit notes, making it a very unique bean.

【Natural / Sundried / Dry Processed】
Also known as the natural drying method or unwashed process, the natural process is one of the most traditional and widely used methods of coffee processing. This method does not involve the use of water. Originating in Ethiopia, coffee cherries are harvested and laid out to dry under the sun before being hulled. The seeds remain inside the fruit throughout the extended drying period, absorbing flavors from the skin, pulp, and mucilage. This process enhances the coffee's sweetness and body, often resulting in unique and distinctive aromas.
