FAZENDA UM [2023 WBC World Champion's Family Estate (Brazil)]

"Um" in Korean is the surname "嚴" (pronounced Eom). The Um family immigrated to Brazil from Korea, and by Boram Um's generation, they were already deeply rooted Brazilian coffee professionals. This coffee from the Um Family Estate represents the starting point of the flavors that Boram Um, the 2023 World Barista Champion, showcased.

In 2011, the Um family purchased their first plot of land in South of Minas, officially entering coffee production. In 2016, they established their own brand, Um Coffee Co., in São Paulo, which has since expanded to six locations, becoming a well-known representative of specialty coffee in the region.

Seeking more diverse terroir, they acquired a second estate in Espírito Santo in 2019, dedicated to cultivating and experimenting with a wider range of varieties. Today, the Um Family Estate cultivates over 48 Arabica coffee varieties across both locations, categorizing their beans into three main tiers based on quality and characteristics: bulk specialty beans, micro-lot specialty beans, and the competition-grade Competition Series.




Arabica Coffee Varietal - Catucaí 785

First bred in 1988 by the Brazilian Agricultural Research Corporation (IAC), Catucaí 785 is a hybrid of the Catuai and Icatu varieties, combining high yield with disease resistance. This varietal is widely cultivated in several regions of Brazil, particularly excelling in the high-altitude areas of Espírito Santo state.

The Um Family Estate (Fazenda Um) is located in the South of Minas region of Brazil. The estate features a lake, where a misty ambiance is often seen in the mornings, creating a picturesque, almost ethereal setting. Additionally, the farm raises several horses and cattle, primarily cared for by Boram's father, Stefano Um, as an additional source of income outside the coffee harvest season to sustain the estate's basic operations.

This particular lot of Catucaí 785 utilizes the Pulped Natural processing method, which preserves the natural sweetness of the fruit while showcasing a clean and well-defined flavor profile. During processing, the coffee cherries undergo fermentation in a low-temperature environment to maximize the preservation of the varietal's characteristics.

Catucaí 785 reveals its flavor potential in its simplicity, representing a gentle side of Brazilian coffees. It is well-suited for coffee enthusiasts who appreciate balanced flavors and a delicate mouthfeel.



(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. 
This batch uses the Pulped Natural, briefly described as follows:

【Pulped Natural】

Pulped Natural is a method of processing green coffee beans in Brazil. A pulping machine removes the outer skin and a portion of the mucilage layer. The beans are then placed under the sun to dry. This is similar to the Yellow Honey process, where "honey" refers to the sticky mucilage layer, with a stickiness akin to honey. The mucilage layer retains a high proportion of sugars and acids, and with proper fermentation control, this process enhances flavor and sweetness.
