乾香 溼香 風味 Fragrance Aroma Flavor

 

常在講的咖啡香味,為何又有咖啡風味 。在咖啡杯測時,會在品嚐前以嗅覺接觸咖啡,分乾香和溼香。而在開始喝入咖啡時稱為風味。

We often talk about coffee aroma, why there is coffee flavor. When cupping coffee, you will feel the coffee with your sense of smell before tasting it, and divide it into fragrance and aroma. And when you start drinking coffee, it's called flavor.

 

乾香,咖啡磨粉尚未注入熱水前的香氣

Fragrance or dry aroma, the fragrance of coffee grounds before being brewed with hot water


溼香,咖啡粉注入熱水後的溼香氣

Aroma, the wet aroma of coffee powder after poured into hot water


風味,咖啡液擴散在口腔內,即由口中進入所有的味覺感覺直到從鼻腔穿出來,所感受到的所有綜合印象。

Flavor, the diffusion of coffee liquor in the mouth, is all the combined impressions from the mouth to all taste sensations until it passes out of the nasal cavity.
