The Ipanema Estate, founded in 1969 in Brazil, spans over 5,500 hectares and is home to 14 million coffee trees. It has obtained numerous international certifications, including Rainforest Alliance and Fairtrade USA. The Fazenda Rio Verde section of the Ipanema Estate is an area that retains a significant portion of its original forest, surrounded by virgin forest, waterfalls, hot springs, and mountain trails. During the harvest season, the estate picks ripe coffee cherries on a weekly basis, determining the optimal harvesting time for each section. For each batch, considering its location, altitude, sun exposure, rainfall conditions, and variety, they identify the ripening curve to ensure high-quality cupping flavors.
