咖啡36味 Coffee 36 Flavors

 

咖啡36味 -是 美國精品咖啡協會 (SCAA) 評鑑訓練的教材,在小瓶子裝36種味道精油,做為訓練嗅覺記憶,並讓杯測師有形容咖啡香氣的共通語言。

Coffee 36 Flavors is the training material used by the Specialty Coffee Association of America (SCAA) for sensory evaluation training. It contains 36 different essential oils, each in a small bottle, which are used to train the olfactory memory of coffee tasters and provide a common language to describe coffee aromas.

 

ex: 第15味-檸檬,是用檸檬蒸餾物取得,檸檬味使得咖啡有著清新、高雅以及活力,這香味出現在口中的味覺而多於鼻子中的嗅覺,是味覺和嗅覺的雙重享受,也是咖啡36味訓練中的一種。

For example, the 15th flavor, Lemon, is obtained through distillation of lemon, and imparts a refreshing, elegant, and vibrant flavor to coffee. This aroma is experienced more in the taste buds of the mouth than in the nose, offering a dual enjoyment of both taste and smell. It is one of the flavors used in the Coffee 36 Flavors training.
