Coffee Flavor 
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. Santa Fe Estate | Rainforest Alliance Certified Coffee Farm of Pijao, Colombia


Finca Santa Fe, located in the Pijao region of Quindío, Colombia, sits at an altitude between 1,700 and 1,900 meters above sea level. Spanning 37 hectares, it is one of the few coffee estates in the area with such a large land area, significantly exceeding the less than 5-hectare scale of most smallholder farms. The estate is Rainforest Alliance certified, demonstrating its commitment to sustainable agriculture and ecological conservation.

Finca Santa Fe primarily cultivates coffee varieties such as Castillo and Yellow Caturra. It also integrates diverse shade trees and food crops like bananas, plantains (a local staple banana variety), guavas, and avocados within the farm, fully utilizing land resources and promoting biodiversity.

In 2018, owner Nubia took over the estate's management alongside her mother following her father's passing. Due to the variable climate of the Pijao region, the estate mainly employs the washed processing method, with honey and natural processes being less common. However, with the increasing popularity of unique processed flavors, Nubia hopes to experiment with a wider range of honey processes when weather conditions permit, aiming to showcase complex coffee flavor profiles.


Arabica Coffee Varietal - Pink Bourbon (Bourbon Rosado)

Named for its elegant and captivating rose-pink coffee cherries, the Pink Bourbon variety has gained significant recognition. In the final round of the 2023 World Barista Championship, we saw two competitors using this variety. Pink Bourbon is known for its light pink coffee cherries, high sweetness, and complex flavor profile, leading to a surge in interest in recent years.

Rodrigo Sanchez Valencia, owner of Finca Monteblanco, is credited with the earliest discovery of Pink Bourbon. In 2013, he noticed some coffee trees on his farm producing pink cherries. These cherries exhibited a light floral aroma in cupping, similar to Geisha, but with a fuller body. Most surprisingly, Pink Bourbon showed resistance to coffee leaf rust. However, the Bourbon Rosado variety has existed for decades! Back then, when distinguishing between Yellow and Red Bourbon, some trees produced orange or pink-hued cherries. Due to their scarcity, these were often mixed with Red and Yellow Bourbon for sale in the early days. It wasn't until the specialty coffee market began to flourish that farmers started to classify Bourbon Rosado separately, selling it as Orange Bourbon or Pink Bourbon.

Pink Bourbon's appealing flavor has made it very popular, but the mystery surrounding its origin remains unresolved. Current information suggests it may be a hybrid of Yellow and Red Bourbon, but this has not yet been genetically confirmed. In 2019, genetic testing of a Pink Bourbon (Bourbon Rosado) that placed 15th in the Colombia CoE revealed it to be an Ethiopian Landrace variety. However, whether this is the same as other Pink Bourbon varieties is still unclear. In the latest World Coffee Research variety relationship chart, Pink Bourbon has not yet been defined as a distinct variety.

Pink Bourbon is characterized by its high sweetness and intense notes of lemon, citrus, and floral aromas. This particular coffee showcases a rich mouthfeel with bright citrus flavors complemented by delicate floral layers, creating a unique and delightful coffee experience. Its high sweetness makes it well-suited for special processing methods to enhance its flavor characteristics. These attributes have made Pink Bourbon a popular coffee choice, especially favored in recent years by coffee enthusiasts who appreciate sweetness and texture.

The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. 
This batch uses the Honey Process - Orange, briefly described as follows:

【Honey Process - Orange】

This Pink Bourbon, post-processed using dried orange peels, is a successful result of Nubia's bold experimentation. After harvesting, the coffee cherries, along with the pulp and dried orange peels, undergo 72 hours of anaerobic fermentation. The pulp is then removed, and the beans are mixed with the orange peels before being dried on well-ventilated raised beds, with the temperature controlled not to exceed 35ºC, until the moisture content reaches the ideal level.

This coffee exhibits flavors of kumquat jam, mint leaf, orange, and osmanthus. It has a smooth mouthfeel and a lingering finish, embodying Finca Santa Fe's commitment to quality and innovation.
