Coffee Flavor

The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Aladdin Series – Lamp Series Werka Natural G1

Sourced from Werka Kebele in the Nensebo district, this coffee is handpicked by approximately 750 smallholder farmers. Grown within small forest plots averaging 2 to 5 hectares, coffee trees are intercropped with maize and banana under natural shade trees, maintaining a harmonious ecological balance. When the cherries ripen to a deep, cherry-red hue, they are delivered on the same day to the Gara Kogne washing station, ensuring their peak sweetness and freshness are carefully preserved.

This Lamp Series Werka G1” is born in a unique terroir nestled between volcanoes and lakes along the East African Rift Valley, with elevations reaching up to 2,000 meters. Historically, this area has been closely connected to the renowned Sidama region, sharing similar genetic varieties and flavor heritage. Although it is now administratively part of West Arsi, its refined and expressive profile has allowed it to stand out in international competitions in recent years.

Under the cool microclimate of high elevations, coffee cherries mature slowly, allowing nutrients from the land to concentrate within the dense beans. This meticulous cultivation gives rise to an elegant, full-bodied sweetness and layered complexity—befitting its name,Lamp Series Werka G1”

Arabica Coffee Variety – 74110

The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.

Arabica coffee originates from Ethiopia in Africa. To this day, there are hundreds and thousands of wild coffee species within Ethiopia, many of which grow year-round in pristine forests. These indigenous wild species have undergone countless local evolutions, including hybridization, mutation, and crossbreeding, resulting in a vast gene pool of native varieties known as the Arabica gene pool. The native varieties produced within Ethiopia are referred to as Heirloom (古優原生種).

In the 20th century, Ethiopia initiated a series of government-led programs to explore, evaluate, and officially designate coffee varieties.

The variety 74110 gained remarkable recognition in the inaugural Ethiopia Cup of Excellence competition, where washed lots secured 2nd, 3rd, and 8th place. Notably, the 2nd and 3rd place lots both received scores above 90 points from international judges, marking an outstanding achievement.

(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following washed processing methods, described below:

【Washed / Wet Processed】

Also known as the wet process, this method involves removing the skin and pulp of the coffee cherries before drying. The seeds are then fermented in water tanks to eliminate the remaining mucilage on their surface, followed by thorough washing and drying under sunlight or with mechanical dryers.

The washed process produces a cleaner and crisper flavor profile compared to the natural process. Coffees processed this way typically have lighter body, brighter acidity, and distinct fruit flavors. This method is often associated with specialty coffee due to its clarity and vibrant flavor expression.

【Ethiopia Aladdin Series – Werka G1 Washed】

To ensure exceptional clarity of flavor, the washing station implements rigorous quality control. After an initial hand-sorting to remove defects, the coffee cherries undergo flotation and are graded by density. Following this first selection, the cherries are depulped and enter a 48-hour fermentation process.

The entire fermentation takes place under controlled conditions, with temperatures maintained between 18.5 and 20.5°C. Fresh water is replaced every 24 hours to ensure consistency and stability throughout the fermentation.

After fermentation, the beans are transferred to raised drying beds, where they are evenly spread and dried in well-ventilated areas with limited direct sunlight. Each drying bed holds approximately 300 kg of coffee, with the layer thickness kept under 5 cm to maintain proper airflow and even drying. During this period, the beans are regularly turned to ensure uniform fermentation and drying. The process is completed through a slow drying phase of approximately 15 days.
