Coffee Flavor
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Yirgacheffe is a legendary coffee origin that almost every specialty coffee enthusiast has experienced. In reality, this renowned region is home to hundreds of coffee washing stations. Chelba Station, the first collaborative washing station of The RED Circle Project (TRC), is surrounded by coffee farms with nutrient-rich reddish-brown soil. The extensive cultivation of Ensete Ventricosum, commonly known as the Ethiopian false banana, contributes to the naturally sweet and aromatic character of the coffee cherries after harvest. Following Chelba Station’s flotation washing process, the cherries are carefully sorted and transferred to designated fermentation areas for further processing. With access to clean water sources and an average annual temperature of only 18.4°C, Chelba Station provides ideal conditions for coffee processing. The harvested cherries undergo at least 24 hours of controlled drying, followed by washing with exceptionally clean local water, resulting in intense sweetness and the distinctive flavor profile that defines classic Yirgacheffe coffee.
Chelba Station is equipped with more than 12 washing and fermentation tanks and 140 African raised drying beds. Beyond providing washing and natural processing services for local coffee farmers, the station also leverages its experience in various specialty coffee production projects to continuously introduce advanced cultivation and processing techniques. These efforts help farmers achieve more distinctive and higher-quality cup profiles. For those who appreciate the classic elegance of Yirgacheffe coffee, Chelba Station’s exceptional offerings are truly not to be missed.
Arabica Coffee Variety – 74110
Arabica coffee originated in Ethiopia, the birthplace of coffee, where hundreds—even thousands—of wild coffee varieties still exist today. Many of these varieties continue to grow naturally in ancient forests, creating an extraordinary genetic reservoir through generations of local adaptation, mutation, and cross-pollination. This diverse collection of native Arabica genetics is known as the Ethiopian coffee gene pool, and the indigenous varieties discovered and cultivated in Ethiopia are commonly referred to as Heirloom varieties.
Throughout the 20th century, Ethiopia launched a series of official programs to explore, evaluate, classify, and name its unique coffee varieties. Among them, the 74110 variety gained international recognition during the first Ethiopia Cup tasting competition, achieving remarkable results with its washed-process lots placing second, third, and eighth. Notably, the second- and third-place lots received scores of over 90 points from international judges, highlighting the exceptional quality and potential of this distinguished Ethiopian variety.

Coffee Variety Overview
The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.
The world's specialty coffees are derived from Arabica, which itself has various subspecies and hybrids resulting from evolution, crossbreeding, and mutations. These include well-known varieties like Heirloom, Bourbon, Typica, Caturra, Pacas, Catuai, Pacamara, and Geisha. This particular batch uses Caturra, Colombia, and Castillo, briefly described below. These varietals each possess unique flavor characteristics and adaptability, playing a key role in specialty coffee regions worldwide and offering coffee enthusiasts a diverse and rich tasting experience.
(Coffee Processes)
Coffee processing refers to the transformation of ripe red coffee cherries into dried green coffee beans. Each method has its pros and cons, influenced by the natural environment and specific needs of the production region. Therefore, each coffee-producing area adopts processing methods best suited to its conditions. This batch uses the Washed Process, which are summarized below:
【Washed / Wet Processe】
Also called the wet processing method, this technique involves removing the skin and pulp of the coffee cherries before drying. The seeds are then fermented in water tanks to remove residual mucilage from their surface. After fermentation, they are thoroughly washed and dried under sunlight or with mechanical dryers.
Compared to the natural process, the washed process produces a cleaner, crisper cup with lighter body. It often highlights bright, vibrant flavors and the complex acidity that defines specialty coffee. While washed coffees may still exhibit fruity characteristics, they are typically more refined and easier to distinguish, making them a hallmark of high-quality coffee.
