Ethiopia Guji Uraga Suke

Sourced from Suke in Uraga, Guji, one of Ethiopia's fastest-rising specialty coffee regions, this coffee is grown at elevations exceeding 2,000 meters. The combination of high-altitude terrain and significant day-to-night temperature variation allows the cherries to mature slowly, developing remarkable sweetness and complexity. Naturally fertile black soil, enriched by decomposed forest leaves and organic matter, provides an ideal growing environment while supporting sustainable cultivation. Today, Guji has become one of Ethiopia's most acclaimed coffee origins, celebrated worldwide for its vibrant and distinctive cup profiles.
 

Uraga is one of the distinct coffee-growing districts within Guji, alongside Dama, Hambela, and Wamena. In its early years, coffees from Uraga were marketed under the Sidama name, but the region has since earned international recognition for its own identity, producing numerous award-winning coffees, including Cup of Excellence (COE) selections.

Coffee in Uraga is cultivated in fertile red soil enriched with natural organic matter and grown under the shade of native trees, which help preserve soil moisture and create an ideal environment for slow, healthy cherry development. At the region's high elevations, coffee trees typically reach peak productivity for about 12 years before yields gradually decline, after which they are carefully rejuvenated to maintain long-term tree health and consistently exceptional cup quality.


Coffee grown at elevations between 1,800–2,300 meters experiences an extended cherry maturation period of approximately four additional weeks. Studies comparing coffees from 1,650 m to 1,935 m show that higher elevations contribute to improved physical attributes, including greater bean uniformity, density, and overall quality. Beans cultivated at 1,825 m and 1,935 m also exhibit fewer yellowish defects and higher brightness compared to those grown at lower elevations. The cooler high-altitude environment promotes higher sugar accumulation in the beans, resulting in greater sweetness, more complex flavor layers, and a cleaner, more refined cup profile.

Arabica coffee originates from Ethiopia in Africa. To this day, there are hundreds and thousands of wild coffee species within Ethiopia, many of which grow year-round in pristine forests. These indigenous wild species have undergone countless local evolutions, including hybridization, mutation, and crossbreeding, resulting in a vast gene pool of native varieties known as the Arabica gene pool. The native varieties produced within Ethiopia are referred to as Heirloom (古優原生種).

 

Coffee Variety Overview
The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.

These include well-known varieties like Heirloom, Bourbon, Typica, Caturra, Pacas, Catuai, Pacamara, and Geisha. This particular batch uses Caturra, Colombia, and Castillo, briefly described below.

These varietals each possess unique flavor characteristics and adaptability, playing a key role in specialty coffee regions worldwide and offering coffee enthusiasts a diverse and rich tasting experience.

The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses 72hr Freezer Natural processing methods, described below:


【Suke 72hr Freezer Natural】

Fully ripe red coffee cherries are vacuum-sealed and rested at 4°C (39°F) for 72 hours. The low-temperature and low-oxygen environment slows oxidation and preserves delicate tropical fruit compounds, resulting in a cleaner, brighter, and more expressive flavor profile.

The cherries are then dried on African raised beds for approximately 22 days, allowing slow and even dehydration to develop high sweetness, a refined texture, and a vibrant yet smooth acidity. The final moisture content is carefully controlled below 11%, ensuring both storage stability and the preservation of the coffee’s complete flavor expression. Combined with Uraga Suke’s high-altitude terroir, cool and dry mountain climate, and unique low-temperature natural process, this lot delivers a distinctive cup profile featuring clear notes of passion fruit and mango, a silky body, and exceptional sweetness.
