Coffee Flavor 
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.

Ipanema Estate, established in 1969, is an iconic Brazilian estate boasting over 5,500 hectares of land and 14 million coffee trees, with partners across 25 countries worldwide. Dedicated to producing high-quality and traceable Brazilian specialty coffee, Ipanema selected 32 micro-lots from the 69 within Fazenda Rio Verde that are above 1,000 meters in altitude. The three varieties planted here are cultivated with separated and special care. By combining different altitudes and sun exposure, along with three harvesting methods, two pre-preparation methods, and various drying processes, Ipanema effectively creates a more diverse cup profile and truly tailored results, further ensuring the continuous and stable production of high-quality coffee.


Beyond just cultivating coffee, sustainability is Ipanema's commitment to its consumers. By collaborating with agricultural scientists, they seek better operational models for both coffee and the ecosystem. To maintain the integrity of the forests, only 626 hectares of the 1,500-hectare estate are used for coffee cultivation, with 167 hectares for other crops, leaving a significant 773 hectares as a natural reserve. Through these efforts, Ipanema earned UTZ certification in 2002 and Rainforest Alliance certification in 2004.

Ipanema also has its own dedicated coffee cupping team. All members hold Specialty Coffee Association (SCA) cupping licenses and CQI Quality Institute certificates. On average, they conduct over 10,000 quality checks annually, including 300 cupping tests daily. Through these rigorous quality controls, Ipanema's coffee consistently maintains its high-quality standard.

The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.


 
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following three processing methods, described below:


【Natural / Sundried / Dry Processed】
Also known as the natural drying method or unwashed process, the natural process is one of the most traditional and widely used methods of coffee processing. This method does not involve the use of water. Originating in Ethiopia, coffee cherries are harvested and laid out to dry under the sun before being hulled. The seeds remain inside the fruit throughout the extended drying period, absorbing flavors from the skin, pulp, and mucilage. This process enhances the coffee's sweetness and body, often resulting in unique and distinctive aromas.

 

【Dulce Natural (Sweet Natural)】 is Ipanema Estate's classic best-selling product. Its thick body and chocolate flavor are why it's so widely loved. Sweet Natural is harvested from three different Ipanema farms. The cherries are directly sun-dried with their pulp and skin intact, preserving more of the green beans' flavor and sweetness.
