When brewing pour-over coffee, we meticulously record parameters like dose, water temperature, and total drawdown time, yet often overlook a subtle key variable: the exact duration it takes to complete a single pour.

Inspired by Taiwanese competitor Yuta Chu, who seamlessly linked processing, roasting, and brewing through the concept of "rhythm" at the World Brewers Cup, we designed an A/B experiment to explore a core question: When maintaining a low pouring height near the dripper, how do the final total dissolved solids (TDS) and flavor profiles differ when the first pour is executed fast versus slow?

This is an independently designed comparative trial, not a replication of the competitor's official tournament recipe.

For this test, we used the Panama La Esmeralda Special Guabo 6NB Natural Geisha 2026. Its official cupping notes feature cherry, jasmine, peach, mandarin orange, honeyed sweetness, and citrus acidity, rounded out by a long, delicate, and clean fruity finish.

The coffee was roasted on October 15 and brewed on October 16 (Day 1 post-roast). Thus, these results reflect the bean’s fresh state; as the coffee rests and degasses, repeating this test will yield further valuable insights.

Experimental Methodology

Both groups utilized a 15g dose to 225g of water (1:15 brew ratio) with identical bean selection, equipment, grind size, water temperature, and a consistent low pouring height. The variable was isolated to the pouring speed of the first pour, while the second pour was kept identical across both setups.

The flow rate figures below refer to the "water input per second," not the drawdown velocity at the bottom of the filter. Because Group A finished its first pour earlier, it spent more time waiting before the second pour. Consequently, this experiment evaluates the holistic impact of altered pouring rhythm rather than just the physical agitation force of the water stream.

A 的 TDS 是 1.08%,B 是 1.17%。

Sensory Profiles: Side-by-Side Comparison

Group A (Fast First Pour): Showcased prominent cherry and mandarin orange notes accompanied by a pleasant citrus zest bitterness, bright cherry acidity, and a structured body. As it cooled, floral honey and brown sugar emerged in the finish, though the tail end felt slightly abrupt rather than seamless.

Group B (Slow First Pour): Highlighted delicate jasmine, peach, and honeyed sweetness, paired with a rounder mandarin acidity. As it cooled, notes of citrus and floral aromatics continuously evolved, delivering a silky texture and a remarkably lingering finish.

Interestingly, Group A, which tasted more structured and punchy, was not the cup with higher measured concentration.

TDS of Group A (Fast Pour) is 1.08%, while Group B (Slow Pour) is 1.17%. Since both brews yielded an identical 179 g of coffee beverage, calculating total extracted solubles from TDS and beverage weight shows that Group A extracted approximately 1.93 g of solubles, whereas Group B extracted 2.09 g. The slower pour in Group B not only delivered a silky mouthfeel but also brought more total solubles into the final cup.

This serves as a crucial diagnostic reminder: TDS/concentration, structural perception, and texture describe distinct dimensions of coffee. We cannot assume a cup has a higher extraction yield simply because it tastes bolder or more intense on the palate.

Key Takeaways and Further Exploration

The empirical data did not support the hypothesis that "a faster pour rate always leads to higher extraction." Under these specific conditions: Day 1 post-roast, low pour height, and our recipe framework, Group B’s slower first pour rate (6 g/s) yielded a higher TDS alongside a silkier, more refined sensory experience.

However, a single trial is insufficient to form a generalized brewing rule. Moving forward, repeating this experiment across different resting periods will determine whether the contrast between fast and slow pouring rhythms remains consistent over time.

Next time you brew, try recording one more metric: How many seconds did that pour take? Examining pouring rhythm, TDS, and sensory perception together will give you a far more precise framework for understanding every adjustment you make.
