特殊處理法正在改變精品咖啡的風味表現。比起名稱本身,更重要的是了解處理過程、風味來源,以及是否清楚標示。過去我們認識咖啡生豆處理法,最常從三個基本分類開始:水洗、日曬、蜜處理。
水洗處理強調乾淨、明亮、酸質清楚;日曬處理保留整顆咖啡櫻桃一起乾燥,常帶有更飽滿的果香與甜感;蜜處理則保留部分果膠乾燥,介於水洗與日曬之間,常呈現更圓潤的甜感與口感。
這些傳統分類至今仍然重要,但近年精品咖啡的處理技術快速演進,我們開始看到更多新的名稱:厭氧發酵、二氧化碳浸漬、乳酸發酵、酵母發酵、熱衝擊處理、共發酵,以及近年討論度很高的 Infused Coffee。
這些特殊處理法的出現,代表咖啡處理已經不只是「把咖啡果實變成可以烘焙的生豆」,而是進一步透過發酵環境、壓力、溫度、時間、微生物與外部風味來源,去創造更明確的香氣方向。
到了現在,只寫「特殊處理」常常已經不夠。因為同樣叫厭氧,可能只是密閉發酵,也可能加入水果共同發酵;可能是控制 CO₂ 環境,也可能是後段浸漬水果汁、天然香料,甚至人工香精或人工風味來源。
因此,現代精品咖啡更需要透明標示。不是只有寫好喝,而是要讓消費者知道:這支咖啡的香氣,是來自品種與產地,還是來自發酵設計?是否有加入外部風味來源?使用的是天然水果、果汁、花草,還是人工香精?是否屬於共發酵或 infused 類型?
Special processing methods are reshaping the flavor landscape of specialty coffee. Today, understanding the processing mechanics, the origin of the flavors, and whether they are transparently labeled is far more important than the marketing names themselves. Historically, our understanding of green coffee processing began with three foundational categories: washed, natural, and honey.
Washed processing emphasizes cleanliness, brightness, and high-definition acidity. Natural processing dries the coffee cherries whole, typically yielding a plumper fruit character and intense sweetness. Honey processing dries the seeds with a portion of the mucilage intact, bridging the gap between washed and natural, to offer a rounder sweetness and mouthfeel.
While these traditional classifications remain foundational, the rapid evolution of processing technologies in recent years has introduced a wave of new terminology: anaerobic fermentation, carbonic maceration, lactic fermentation, yeast inoculation, thermal shock, co-fermentation, and the highly debated "infused coffee."
The emergence of these innovative methods signifies that coffee processing has evolved beyond merely "converting coffee cherries into roastable green beans." It has become a deliberate craft—manipulating fermentation environments, pressure, temperature, time, microbes, and external flavor adjuncts to sculpt a definitive aromatic direction.
Today, simply labeling a lot as "specially processed" is no longer sufficient. A coffee labeled "anaerobic" might simply be fermented in a sealed tank, or it could be co-fermented with actual fruit. It might involve a controlled CO₂ environment, or it could entail a post-fermentation maceration in fruit juices, natural botanicals, or even artificial flavorings.
Consequently, modern specialty coffee demands radical transparency in labeling. It is no longer enough to just state that a coffee tastes good; consumers have a right to know: Does this coffee's aromatic profile stem from its variety and terroir, or from an engineered fermentation protocol? Were external flavor adjuncts introduced? Were natural fruits, juices, or botanicals used, or were they artificial flavorings? Does it fall under a co-fermented or an infused category?
坊間常見的特殊處理法
用咖啡愛好者比較好理解的方式,現在常見特殊處理大致可以分成幾類。
第一類是發酵環境控制,例如厭氧發酵 Anaerobic Fermentation、二氧化碳浸漬 Carbonic Maceration、CO₂ controlled fermentation。這類處理的重點,是控制氧氣、二氧化碳、壓力、溫度與發酵時間,讓咖啡呈現更集中的果香、酒香、甜感與酸質結構。
第二類是微生物控制,例如乳酸發酵與酵母發酵。這類處理透過特定菌種或酵母,使發酵方向更可控,常帶來優格感、乳酸感、酒釀感或更圓潤的口感。
第三類是共發酵 Co-fermentation。共發酵指的是咖啡在發酵過程中,與水果、果汁、花草、香料或其他原料一起發酵。重點是「一起發酵」。如果使用的是天然水果或果汁,可以稱為自然水果共發酵;如果使用的是人工香精或人工風味來源,則應該清楚標示,不能只用「水果共發酵」模糊帶過。
第四類是 Infused Coffee。Infused 可以理解為「風味導入型特殊處理」。它不一定是一起發酵,而是在處理過程中,透過浸漬、吸附或導入方式,讓咖啡接觸外部風味來源,使咖啡形成更明確的香氣主題。
但要特別注意:Infused 這個詞本身,並不代表天然,也不代表香精。
它只代表這支咖啡在處理過程中有「風味導入」。至於導入來源是天然水果、果汁、果泥、花草、香料,還是人工香精、人工香料或調配風味液,必須看處理廠與生豆商是否透明揭露。
簡單來說:厭氧,是控制發酵環境;共發酵,是咖啡與其他原料一起發酵;Infused,是讓外部風味來源透過浸漬或吸附導入咖啡。三者有時會重疊,但概念並不相同。
Common Categories of Modern Special Processing
To make these advanced methods more digestible for coffee enthusiasts, contemporary special processing can be broadly organized into four distinct categories:
1. Environmental Control (e.g., Anaerobic Fermentation / Carbonic Maceration / CO₂ controlled fermentation)
This category focuses on regulating oxygen, carbon dioxide, pressure, temperature, and fermentation duration. The objective is to guide the microbes to produce a more concentrated structure of fruit notes, winey characteristics, sweetness, and acidity.
2. Microbial Inoculation (e.g., Lactic and Yeast Fermentation)
By introducing specific strains of bacteria or yeast, processors make the fermentation trajectory highly controllable. This approach frequently imparts yogurt-like creamy notes, lactic acidity, fermenty/koji-like complexity, or a mellower, more velvety mouthfeel.
3. Co-Fermentation
Co-fermentation dictates that coffee is fermented actively alongside fruits, juices, botanicals, spices, or other ingredients. The defining factor here is simultaneous fermentation. If fresh, whole fruit or pure juices are used, it should be designated as Natural Fruit Co-Fermentation. Conversely, if artificial flavorings or synthetic compounds are introduced, it must be transparently disclosed rather than obscured under a vague "fruit co-fermentation" label.
4. Infused Coffee
Infusion can be understood as a "flavor-introduced processing method." It does not necessarily require simultaneous fermentation. Instead, at some stage of processing, the coffee is brought into contact with external flavor sources through maceration, absorption, or injection, embedding a highly specific aromatic theme into the beans.
Crucial Distinction: The term "Infused" itself does not automatically imply synthetic chemicals, nor does it guarantee 100% natural ingredients. It simply indicates that flavor introduction took place during processing. Whether the introduced source was natural fruit, juice, puree, herbs, and spices, or artificial flavorings and compounded solutions depends entirely on the transparent disclosure of the washing station and green bean importer.
In short: Anaerobic manipulates the fermentation environment; Co-fermentation means fermenting coffee together with other ingredients; Infusion introduces external flavor sources via maceration or absorption. While these methods occasionally overlap, their core concepts are fundamentally different.
天然水果特殊處理,和香精導入不同
談到 co-fermentation 或 infused coffee,很多人第一個疑問是:這是不是香精豆?
這裡必須清楚區分。
如果處理廠在生豆處理階段使用的是天然水果、果汁、果泥、花草,並透過發酵或浸漬過程,讓咖啡與這些天然原料產生風味互動,這是一種自然原料參與的特殊處理。
但如果處理過程中使用的是人工香精、人工香料或調配風味液,即使它同樣發生在生豆階段,也應該被清楚標示為人工風味導入。它仍然可以被稱為 infused 類型,但不能讓消費者誤以為是天然水果共發酵。
一般所稱的香精豆,常見是指在咖啡烘焙後額外添加人工香料或香精油,使咖啡呈現榛果、香草、焦糖、巧克力等特定風味。不過現在更複雜的是,有些產地端 infused coffee 並不是烘焙後加香精,而是在生豆處理階段就使用人工香精或人工風味來源。這類咖啡如果沒有清楚標示,消費者就很容易誤以為它是天然水果或果汁處理。
因此,問題不在於 infused 這個詞本身,而在於是否說清楚「infused 的來源是什麼」。
Natural Fruit Special Processing vs. Artificial Flavor Infusion
When discussing co-fermentation or infused coffee, the immediate question many ask is: "Is this just flavored/chemical coffee?"
A clear line must be drawn here:
Natural Ingredient Processing: If a washing station utilizes real fruits, juices, purees, or botanicals during the wet mill stage, allowing the coffee to naturally interact with these ingredients through fermentation or maceration, it constitutes a special process driven by natural inputs.
Artificial Flavor Introduction: If artificial flavorings, synthetic extracts, or formulated chemical solutions are used, even if introduced at the green bean stage, the coffee must be explicitly labeled as an artificial flavor infusion. It still falls under the infused umbrella, but it cannot be misrepresented as a natural fruit co-fermentation.
Traditional "flavored coffee" typically refers to adding artificial syrups or flavoring oils to the coffee after it has been roasted to mimic hazelnut, vanilla, caramel, or chocolate. However, the modern landscape is far more complex; some origin-level infused coffees introduce artificial flavorings directly into the wet green coffee during processing. If left unlabeled, consumers can easily mistake them for natural fruit or juice macerations.
Therefore, the issue does not lie with the word "infused" itself, but rather with the failure to specify "infused with what."
我們可以把它分成三種:
第一種,是天然水果/果汁共發酵。
咖啡與天然水果、果汁、果泥或花草一起發酵,屬於自然原料參與的 co-fermentation。
第二種,是天然原料浸漬導入。
咖啡在處理過程中接觸天然水果汁、花草、香料或其他天然來源,使香氣被吸附或導入,屬於天然原料型 infused process。

咖啡在生豆處理階段或烘焙後,使用人工香精、人工香料或調配風味液,使咖啡呈現特定香氣。這類咖啡也可能被稱為 infused,但應該明確標示為人工風味導入,而不是自然水果共發酵。
好的特殊處理咖啡,不只是聞起來像水果,而是喝起來有完整的酸甜結構、口感厚度與尾韻延伸。若只是香氣很強,卻與咖啡本身結構脫節,或香氣浮在表面,就容易讓人覺得不自然。
所以,不能把所有加入水果或果汁的處理都簡單說成香精豆;但也不能因為標示 infused,就自動認定它一定是天然水果處理。真正關鍵是:使用什麼原料、在什麼階段加入、是否透明標示。
Three Core Classifications of Infused Coffee
To bring clarity to the market, we can categorize these coffees into three clear tiers:
1. Natural Fruit/Juice Co-Fermentation: Coffee fermented simultaneously with real fruits, juices, purees, or botanicals. This is a co-fermentation driven entirely by natural inputs.
2. Natural Input Infusion: Coffee brought into contact with natural fruit juices, botanicals, spices, or other organic sources during processing to absorb those aromatics. This represents a natural-input infused process.
3. Artificial Flavor/Essence Infusion: Coffee treated with synthetic flavorings, artificial extracts, or compounded chemical flavor solutions at either the green bean or post-roast stage. While still an infused coffee, it must be explicitly disclosed as an artificial flavor introduction, never as a natural fruit co-fermentation.
A well-executed specially processed coffee should never just smell like fruit; it must deliver an integrated structure of sweetness and acidity, a balanced body, and a clean, lingering finish. If a coffee presents an intense aroma that feels completely disconnected from its underlying physical structure, or if the aroma feels like it is merely "floating on the surface," the experience can feel jarringly unnatural.
Thus, we should not oversimplify and dismiss all fruit- or juice-involved processing as cheap "flavored coffee." Equally, we must not assume a coffee is completely natural just because it uses the word "infused." The absolute keys are: What ingredients were used, at what stage were they added, and is it transparently labeled?
以瑪格麗特莊園為例
哥倫比亞瑪格麗特莊園,是理解現代特殊處理法很好的例子。它的處理法不是單純水洗、日曬或蜜處理,而是更明確的風味導向設計。
其中一類是葡萄乾厭氧水洗。若只是一般葡萄乾厭氧水洗,可能指咖啡櫻桃經過脫水或萎凋,使糖分濃縮後再進行厭氧與水洗。但瑪格麗特莊園這個批次,產地說明有加入水果、果汁共同發酵,因此它是raisin anaerobic washed以及Co-fermentation 共發酵類特殊處理。
另一類是 CO₂高壓厭氧蜜處理,產地說明這類批次屬於 Infused 類特殊處理。其概念是先透過 CO₂高壓環境,使咖啡生豆細胞結構產生變化,讓後續水果汁或風味來源更容易被咖啡吸附,接著再進行浸漬與蜜處理。
簡單區分:葡萄乾厭氧水洗,是水果/果汁共發酵特殊處理;CO₂高壓厭氧蜜處理,是 Infused 類特殊處理。Infused 的重點是風味導入,Co-fermentation 的重點是共同發酵。
Case Study: Finca La Margarita
Colombia's Finca La Margarita serves as an excellent case study for modern special processing. Their protocols are not basic washed, natural, or honey processes; they are precisely engineered, flavor-forward designs.
Raisin Anaerobic Washed (Co-Fermentation): In standard processing, a "raisin anaerobic washed" lot might simply mean the coffee cherries underwent a wilting or dehydrating stage to concentrate sugars before anaerobic fermentation and washing. However, for this specific lot from Finca La Margarita, the farm documentation specifies that real fruits and juices were added to ferment alongside the coffee. Therefore, this lot is classified as a raisin anaerobic washed Co-Fermentation.
High-Pressure CO₂ Anaerobic Honey (Infusion): The estate notes clarify that this selection belongs to the Infused category. The methodology uses a high-pressure CO₂ environment to alter the cellular structure of the green coffee, making it highly receptive to absorbing the subsequent fruit juices or flavor adjuncts during the maceration and honey-drying phases.
To put it simply: The Raisin Anaerobic Washed lot is a fruit/juice co-fermentation, while the High-Pressure CO₂ Anaerobic Honey lot is an infused process. The core of infusion is flavor introduction; the core of co-fermentation is simultaneous fermentation.
如何欣賞特殊處理咖啡?
喝特殊處理咖啡時,可以用不同於傳統咖啡的角度欣賞。
傳統水洗咖啡,我們看重產地、品種、乾淨度與酸質結構;日曬咖啡,我們觀察果香熟度、發酵乾淨度與甜感;蜜處理咖啡,我們欣賞果膠感、甜感與口感平衡。
而 co-fermentation 或 infused coffee,則可以觀察香氣主題是否明確、風味來源是否自然、甜感是否乾淨、發酵感是否過重、尾韻是否延續,以及整體是否仍保有咖啡的結構。
一支好的特殊處理咖啡,不只是香氣強,而是香氣、酸質、甜感、口感與尾韻能夠整合在一起。如果只有很重的水果香,卻缺乏乾淨度與尾韻,那不一定是好的特殊處理。
How to Evaluate and Appreciate Specially Processed Coffees
When tasting co-fermented or infused coffees, we can appreciate them through a completely different lens than traditional lots:
With a traditional washed coffee, we prize terroir, variety, cleanliness, and structural acidity.
With a natural coffee, we look for fruit ripeness, clean fermentation, and deep sweetness.
With a honey coffee, we appreciate the mucilaginous mouthfeel, sweetness, and tactile balance.
With co-fermented or infused coffees, our evaluation shifts to assessing whether the aromatic theme is clearly defined, whether the flavor inputs taste natural, if the sweetness remains clean, whether the fermenty notes overwhelm the cup, if the finish lingers beautifully, and most importantly whether the coffee still retains its inherent structural integrity as a coffee.
An exceptional specially processed coffee does not merely shout with intense aromas. It seamlessly integrates aroma, acidity, sweetness, mouthfeel, and finish. If a cup offers nothing but a heavy wall of fruit aroma while lacking clarity, cleanliness, and a proper finish, it fails the standard of excellent special processing.
特殊處理不是問題,不透明才是問題
咖啡處理法正在快速變化,坊間越來越多的厭氧、CO₂、共發酵與 infused coffee,我們可以看到精品咖啡正在進入更複雜、更有創造力,也更需要透明標示的時代。
特殊處理法本身不是問題。天然水果共發酵、天然果汁導入、人工風味導入,都應該被清楚分類,而不是全部混在一起。
真正重要的是:是否清楚標示?是否誠實說明?是否讓消費者知道自己喝到的是傳統風土型咖啡、天然水果特殊處理,還是人工風味導入型咖啡?

Special Processing Is Not the Problem; A Lack of Transparency Is
The frontiers of coffee processing are moving at an incredible pace. As the market fills with anaerobic, CO₂, co-fermented, and infused coffees, it is clear that specialty coffee is entering a more complex, creative, and demanding era, one that desperately requires honest labeling.
Special processing methods are not inherently problematic. Natural fruit co-fermentation, natural juice infusions, and artificial flavor introductions all have a place in the industry, but they must be clearly segregated, not lumped together.
The real question we must ask is: Is it clearly labeled? Is it honestly explained? Does the consumer know whether they are drinking a traditional, terroir-driven coffee, a natural fruit special process, or an artificially infused coffee?
