摩摩拉莊園 Mormora Estate

摩摩拉莊園 (Mormora)位於衣索比亞(Ethiopia)谷吉(Gujii)夏奇索(Shakiso),一個佔地200公頃的大型單一莊園,咖啡豆在美麗的野生森林下以有機種植。在收穫季節,11月至2月期間,人們會採摘成熟的咖啡櫻桃,並在6-8小時內在非洲棚架上鋪平,厚度保持在2-4厘米之間,以確保均勻乾燥。

The Mormora Estate, located in Shakiso, Gujii, Ethiopia, is a large single estate covering 200 hectares where coffee beans are organically grown under the beautiful wild forest. During the harvesting season from November to February, ripe coffee cherries are handpicked and spread on African beds with a thickness of 2-4 centimeters to ensure even drying within 6-8 hours.

 

櫻桃每小時至少翻兩次,同時工作人員將未成熟的、昆蟲蛀壞的、過熟的櫻桃移除。根據天氣情況,總乾燥時間為2至3週,在雨季和夜間,咖啡被塑料薄膜覆蓋。在這個過程中,咖啡櫻桃的甜味果味粘液滲入豆中,留下非常明顯的水果風味。

The cherries are turned at least twice every hour, and workers remove unripe, insect-damaged, and overripe cherries. The total drying time is 2 to 3 weeks, depending on weather conditions, and during the rainy season and at night, the coffee is covered with plastic sheets. During this process, the sweet fruity mucilage from the cherries seeps into the beans, leaving a distinct fruity flavor.
