溫度與味覺 - 喝一杯咖啡的感受,會隨著溫度而改變。據研究指出,如上圖示,甜感是愈接近體溫感覺愈強,苦感是溫度愈高感覺愈低,酸感幾乎不受溫度影響。

Temperature and Taste - The feeling of drinking a cup of coffee will change if the temperature changes. According to research, as shown in the figure above, the sweetness is stronger when it closer to the body temperature, the bitterness is the lower when the temperature is lower, and the acidity is hardly affected by the temperature.

 

但是當咖啡溫度接近體溫時,即使酸感不變,還是覺得酸感下降了,其實是因為甜感上升大於酸感了。

But when the coffee temperature is close to body temperature, even if the acidity remains unchanged, it tastes less acidity because the sweetness rises more than the acidity.

 

好咖啡甜感高,酸質愉悅,沒什麼苦感,所以不用趁熱喝;一杯好咖啡,冷了也好喝,值得細細品味。

Good coffee has a high sweetness, pleasant acidity, and no bitterness, so it is not necessary to drink it while it is hot. A good cup of coffee is delicious even when it is cold, and it is worth savoring carefully.
