溫度與味覺 -常聽人說,一杯好咖啡,風味隨著溫度而改變。
Temperature and Taste - It is often heard that the flavors of a good cup of coffee change with the temperature.
試著探討甜感、苦感、酸感。甜感是愈接近體溫感覺愈強烈,苦感則是溫度愈高感覺愈溫和,酸感幾乎不受溫度影響。所以,咖啡剛沖煮好,還沒這麼甜;當咖啡溫度接近體溫時,甜感增加;但當咖啡整個冷掉低於體溫時,甜感下降,苦感上升。
Try to explore sweetness, bitterness, and acidity. The sweetness is the stronger when it’s close to the body temperature, the bitterness is the mellower when temperature is higher, and the acidity is hardly affected by the temperature. Therefore, if the coffee has just been brewed, then it is not so sweet. When the temperature of the coffee is close to body temperature, the sweetness increases. When the coffee cools down below body temperature, the sweetness decreases and the bitterness increases.
一杯好咖啡在高溫及低溫,都好喝。而如果放冷後感受到苦澀味太重,我們可以知道這杯咖啡的品質堪慮,以前常被教導咖啡要趁熱的喝,因為冷了真的不好喝。好咖啡值得細細品味。
A good cup of coffee is delicious in both high and low temperatures. And if the bitterness is too heavy after cooling, we will know that the quality of this cup of coffee is not very good. In the past, we were told to drink coffee while it was hot, because it is really not good when it is cold. Good coffee is worth savoring.
