我們從信譽良好、往來很久的生豆貿易商那買來的生豆,在烘焙前、會篩豆、挑除瑕疵豆,咖啡在生豆狀態時,聞生豆是沒有什麼味道的,就是生豆的清新乾淨的風味;好的生豆不會有雜味、土味、藥水味等瑕疵生豆氣味。
We buy green beans from reputable and long-established green beans traders. Before roasting, we will sieve the beans and pick out the defective beans. When the coffee is raw, there is no smell and only the fresh and clean flavor of beans. Good green beans will not have the smell of bad green beans, such as miscellaneous, earthy, and medicine, etc.
而咖啡的風味,是在烘好後、也就是熟豆才會有的,為什麼呢?簡單來說就是:咖啡風味,來自咖啡生豆中各種營養成份在烘焙下,熱降解成各式氣味分子結構,產生類似各種香氣的風味。好的咖啡豆本身香氣自然豐富,並且在高溫、中溫、低溫時,會有各種自然的香氣變化,非常怡人、值得細細品味。
