Papua New Guinea Waghi Valley Kimel Estate A Washed
Coffee Flavor
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.
Papua New Guinea Waghi Valley Kimel Estate A Washed
Citrus, cocoa, nuts, subtle honey sweetness.
Kimel Estate is located in Papua New Guinea, originally founded by Australian Bobby Gibbs in 1974 and now owned by traditional local landowners. Although the estate is locally owned, it's operated by an experienced foreign professional management team appointed by the local board of directors, bringing extensive plantation management expertise.
The estate employs 432 permanent staff members, all residing in jungle-surrounded communities within the plantation. To enhance their quality of life, the plantation has established educational facilities for children and provides basic medical care for employees and their families. Clean running water for the estate is supplied by a community project funded by an overseas client, with implementation and oversight handled by the estate management.
Kimel Estate benefits from its location along the Kimel River, which provides a stable supply of clean, high-quality water. This not only ensures consistency in coffee processing but also lays a crucial foundation for the sustainable development of local animal husbandry and agriculture.
Furthermore, the estate actively implements several environmentally friendly policies. For instance, processed coffee pulp is recycled into organic fertilizer, and water used in the wet processing method is reclaimed. Coffee trees are cultivated under natural shade from tall trees like albizia and gravillea, creating favorable microclimate conditions that ensure consistent coffee quality and flavor profiles.
Papua New Guinea, a pristine and mysterious island nation nestled in the southwestern Pacific Ocean, north of Australia, is blessed with abundant natural resources. Its warm, humid climate and predominantly highland terrain make it ideal for coffee cultivation. The vast majority of coffee farms are smallholdings, where farmers eschew artificial fertilizers and chemical sprays, relying solely on natural methods to control pests.
Located within the Pacific Ring of Fire, the island's numerous mountain ranges and lush jungles contribute to its rich biodiversity. This volcanic topography has endowed the country with exceptionally fertile soil, while the high altitudes and tropical climate further enhance the unique and captivating aroma of its coffee.
In the realm of specialty coffee, Papua New Guinea is a nation with immense potential. The flavors, quality, and cleanliness already observed are remarkably compelling characteristics.
The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.
Typica
Typica, the Arabica coffee variety, is one of the closest to the native species. It has a slightly longer bean shape, a clean citric acid flavor, a sweet aftertaste, and an elegant flavor, but its constitution is weak and its resistance to leaf rust is low. It makes the growth and planting conditions difficult, and the tree seedlings are low in yield. Excellent estate beans such as Jamaica Blue Mountains, Sumatra Mandheling, Hawaiian Kona and so on belong to Tepica.
▶Arabica Coffee Variety - Arusha
Arusha is a relatively rare and somewhat mysterious Arabica variety in the specialty coffee world. It originated in the Meru Mountains of Tanzania, and its exact lineage remains unconfirmed. However, it's widely believed to be a natural cross between Bourbon and Typica, inheriting desirable traits from both.
Beyond its native East African origins, Arusha has also been introduced to certain high-altitude estates in Papua New Guinea (PNG). The unique volcanic soil and high-elevation climate there further contribute to this variety's distinct flavor profile.
Arusha is typically cultivated in highlands above 1,500 meters, where the cool climate and pristine environment lead to slow maturation. This slow growth concentrates its flavors and refines its texture. Flavor-wise, Arusha exhibits a warm, full-bodied mouthfeel with bright acidity. Upon tasting, it immediately offers rich fruit notes and a buttery roundness, followed by a long, complex finish. It's truly a classic representation of specialty coffee, captivating from the very first sip.
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses washed processing methods, described below:
【Washed / Wet Processed】
Also known as the wet process, this method involves removing the skin and pulp of the coffee cherries before drying. The seeds are then fermented in water tanks to eliminate the remaining mucilage on their surface, followed by thorough washing and drying under sunlight or with mechanical dryers.
The washed process produces a cleaner and crisper flavor profile compared to the natural process. Coffees processed this way typically have lighter body, brighter acidity, and distinct fruit flavors. This method is often associated with specialty coffee due to its clarity and vibrant flavor expression.
