The purpose of these special blends is to showcase each estate coffee bean’s unique character. By balancing ideal proportions and roast levels to achieve our desired flavor profile, the primary and secondary notes complement each other, creating a synergy greater than the sum of its parts. Coffee originated in Ethiopia, Africa. Worldwide, regions suitable for coffee cultivation lie between 25° north and south latitude, including equatorial areas. Coffee-growing regions require an annual rainfall of 1,500 to 2,000 millimeters, aligned with the flowering cycle of the coffee trees. In addition, fertile soil, ample sunlight, and appropriate altitude are also essential.
The conditions for cultivating high-quality coffee are quite strict. Factors such as sunlight, rainfall, soil quality, temperature, as well as the methods of harvesting and processing the coffee beans, all influence the final quality of the coffee.
Justin Coffee carefully selects beans from top coffee regions around the world and is committed to crafting premium Estate Blend Artisan Series coffees, featuring origins like Ethiopia, Panama, El Salvador, Colombia, and more.
We insist on using 100% Arabica beans (renowned for their elegant flavor and recognized as specialty coffee) in our estate blends. We never use Robusta beans (noted for their harsher taste and more than twice the caffeine, and therefore not considered specialty coffee).
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following three processing methods, described below:
【Washed / Wet Processed】
After the outer skin and pulp are removed, the beans are soaked in a fermentation tank to break down and rinse away any remaining mucilage on the parchment. They are then washed with water, resulting in a coffee with abundant acidity—one of the hallmarks of specialty coffee.
【Natural / Sundried / Dry Processed】
Also known as the natural drying method or unwashed process, it involves sun-drying the whole coffee cherries before removing the husk. During the prolonged sun exposure, the beans absorb flavors from the skin and pulp, resulting in enhanced sweetness, fuller body, and a distinctive aroma.
【Honey / Pulped Natural / Semi-dry Process】
Positioned between the natural and washed processes, the skin and pulp are removed but the sticky mucilage layer is left intact and dried in the sun. The term “honey” refers to the sticky texture of the mucilage, which is reminiscent of honey. This layer retains a high level of sugars and acidity, making it a crucial element of the honey process. As a result, the flavor profile falls somewhere between those produced by the natural and washed methods.
