Founded over a century ago, Finca San Jose Estate in Colombia has a rich history. In 2013, the estate's owner, Monsalve Botero, began experimenting with different aging times for Colombian oak barrels, resulting in a unique, low-temperature fermentation process. By 2019, they had perfected this technique, producing a refined washed coffee with notes of rum and tequila. This innovative approach has yielded a cup with distinct aromas of lime, grape, and cocoa, with a long-lasting finish of sweet rum.

Finca San Jose Estate, located in Caldas, Colombia, is a historic estate that has been at the forefront of the specialty coffee movement. The estate owner, Monsalve Botero, who also produces rum and oak barrels, had a revolutionary idea: ferment coffee beans in rum barrels. After years of experimentation, he has perfected this unique process, resulting in a coffee with complex flavors that sets it apart from traditional methods.
The owner of Finca San Jose Estate, Monsalve Botero, is not only a coffee farmer but also a rum maker. Inspired by the intricate process of rum fermentation, she wondered if a similar technique could be applied to coffee beans.
In 2013, Monsalve Botero embarked on a journey to create a truly exceptional coffee. By experimenting with different aged Colombian oak barrels and low-temperature fermentation, she crafted a coffee that is both complex and elegant.
Now, she is excited to share this unique coffee experience with the world.
The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.
Arabica Coffee Variety: Castillo
Castillo is a new-generation coffee variety developed by the Colombian Coffee Growers Federation (FNC) in collaboration with the National Coffee Research Center (Cenicafé). It was bred to enhance disease resistance, increase coffee yields, and achieve quality and flavor comparable to Caturra. Today, it is one of the most widely cultivated varieties in Colombia.
Castillo inherits Caturra’s compact plant structure and high productivity, while also carrying Timor’s genetic resistance to coffee leaf rust. It is renowned for its smooth texture, aromatic profile, and bright citric acidity, particularly with lemon notes.
(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following Barrel Aging processing methods, described below:
Barrel Aging Process
The rum barrel-aging process begins with meticulously selected coffee cherries, ensuring only the ripest and finest-sized cherries are picked. These cherries are fermented according to strict protocols, washed, and processed using the washed method. Once properly dried, the coffee is placed into rum barrels for fermentation.
This method has become one of the most dazzling innovations in recent coffee exhibitions. Unlike traditional expectations, the entire process uses aged barrels to impart exquisite aromas of liquor without containing a drop of alcohol. Before entering the barrels, the coffee cherries are processed into green beans. These green beans are then placed in the barrels for fermentation. While only the beans near the barrel’s edges initially absorb the aroma, regular stirring ensures that all beans inside the barrel are evenly infused with the liquor aroma and fermentation notes.
This intricate and labor-intensive process results in coffee with a bold, layered profile. The beans feature a striking floral bouquet intertwined with the rich, complex aroma of rum. The flavor bursts with fruity sweetness, offering an irresistible experience of indulgence without intoxication. This is the ultimate allure of the rum barrel-aged series—a captivating combination of vibrant flavor and unparalleled craftsmanship.
