Honduras San Vicente processing station is located in the town of Peña Blanca, in the Santa Bárbara department, north of Lake Yojoa in western Honduras. It has been a consistent winner in the Honduras Cup of Excellence (COE).
In 2009, the Paz family welcomed a new generation into the business, bringing fresh energy and expertise. Every batch of coffee beans undergoes rigorous cupping and grading at the processing station, ensuring strict quality control before being released. They also serve as a crucial bridge between local farmers and roasters of all sizes, incorporating innovative ideas and hands-on approaches to maintain the highest standards of quality and flavor from start to finish.
San Vicente sources coffee from surrounding smallholder farmers, providing them with extensive support in knowledge, techniques, and financial resources. As a result, the coffee produced boasts high sweetness, intense fruity notes, and an exceptional flavor profile that never fails to impress.
Arabica Coffee Variety: Pacas
Pacas is a natural mutation of the Bourbon variety. It was first discovered and selected by the Pacas family in the Santa Ana region of El Salvador in 1949. The most notable difference between Pacas and Bourbon is its shorter stature, clustered fruiting, and high yield, while still maintaining excellent flavor characteristics.
Due to these qualities, Pacas is often used as a foundation for coffee breeding. One of the most famous examples is the hybrid between Pacas and Maragogype, which resulted in the well-known Pacamara variety.

The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses natural processing methods, described below:
【Natural / Sundried / Dry Processed】
Also known as the natural drying method or unwashed process, the natural process is one of the most traditional and widely used methods of coffee processing. This method does not involve the use of water. Originating in Ethiopia, coffee cherries are harvested and laid out to dry under the sun before being hulled. The seeds remain inside the fruit throughout the extended drying period, absorbing flavors from the skin, pulp, and mucilage. This process enhances the coffee's sweetness and body, often resulting in unique and distinctive aromas.
