The century-old Colombia San Jose Estate (Finca San Jose Estate) is a storied property. Since 2013, its lady owner, Monsalve Botero, has been experimenting with winemaking-style, low-temperature fermentation using Colombian oak barrels of various ages for different fermentation periods. Finally, in the 2019 batch, she achieved the anticipated flavor profile, crafting exquisitely washed coffee beans fermented in rum barrels—distinct from conventional washed processing. In the cup, the aroma features pronounced notes of rum and tequila; on the palate, crisp green apple freshness is accompanied by hints of grape, with a lingering finish of lime and raw cocoa, and even the after-breath carries a grape nuance.

Coffee Flavor 
The flavors of coffee are derived from the breakdown of various nutrients in the green coffee beans during roasting. Heat causes these compounds to degrade into a variety of aromatic molecular structures, resulting in a wide spectrum of flavors. High-quality coffee beans naturally possess a rich aroma that evolves at different temperatures—high, medium, and low—offering a delightful and nuanced experience worth savoring.


Coffee originates from Ethiopia in Africa. The regions suitable for coffee cultivation worldwide lie between 25 degrees north and south latitude, including areas around the equator. Coffee-growing regions require an annual rainfall of 1,500–2,000 mm, aligned with the flowering cycle of coffee trees. Additionally, fertile soil, adequate sunlight, and an optimal altitude are essential factors. The conditions for cultivating high-quality coffee are quite stringent—sunlight, rainfall, soil quality, temperature, harvesting methods, and processing techniques all influence the final coffee quality.

Justin Coffee carefully selects beans from world-renowned coffee-growing regions, insisting on premium single estate coffee for its drip coffee. These regions include Taiwan, Panama, El Salvador, Costa Rica, Guatemala, Honduras, Ethiopia, Kenya, New Guinea, and Indonesia (Sumatra), ensuring a top-tier coffee experience.


The coffee tree, botanically classified under the Rubiaceae family and the Coffea subgenus, is an evergreen tree. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica. These three varieties cannot crossbreed to produce different subspecies. The world’s specialty coffee comes from the Arabica variety, and within Arabica, there are various subspecies resulting from evolution, hybridization, and mutation.   The world's specialty coffees are derived from Arabica, which itself has various subspecies and hybrids resulting from evolution, crossbreeding, and mutations. These include well-known varieties like Heirloom, Bourbon, Typica, Caturra, Pacas, Catuai, Pacamara, and Geisha. This particular batch uses Caturra, Colombia, and Castillo, briefly described below:

Justin Coffee carefully selects various Arabica varieties to craft its drip coffee, including world-renowned specialty coffee beans such as Geisha, Pacamara, Heirloom, Bourbon, Typica, Caturra, Pacas, SL28, SL34, Tim Tim, and Catuai.

While coffee flavors can vary due to multiple factors, this at least offers a glimpse into the vast and diverse world of coffee beans.

 


(Coffee Processes)
The term "processing methods" refers to the process of transforming ripe red coffee cherries into dried green beans. Each method has its advantages and disadvantages, influenced by the natural environment and the specific needs of the coffee-producing region. As a result, different regions adopt the processing method most suited to their conditions. This batch uses the following three processing methods, described below:

【Natural / Sundried / Dry Processed】
Also known as the natural drying method or unwashed process, the natural process is one of the most traditional and widely used methods of coffee processing. This method does not involve the use of water. Originating in Ethiopia, coffee cherries are harvested and laid out to dry under the sun before being hulled. The seeds remain inside the fruit throughout the extended drying period, absorbing flavors from the skin, pulp, and mucilage. This process enhances the coffee's sweetness and body, often resulting in unique and distinctive aromas.

【Washed / Wet Processed】
After removing the coffee cherry’s skin and pulp, the beans are soaked in fermentation tanks to break down and remove the mucilage remaining on the parchment. They are then washed with water, resulting in a rich acidity, one of the key characteristics of specialty coffee.

【Honey / Pulped Natural / Semi-dry Process】
Between the natural (sun-dried) process and the washed process, the honey process involves removing the coffee cherry’s skin and pulp while retaining the sticky mucilage layer, which is then dried under sunlight. The term "honey" comes from the sticky texture of the mucilage, resembling honey. This layer contains a high proportion of sugars and acidity, which is key to the honey process, resulting in a flavor profile that falls between the natural and washed methods.
