什麼是烘焙曲線
烘焙曲線,是咖啡烘焙時記錄溫度和時間變化的曲線圖,橫軸為時間、縱軸為溫度,所記錄的溫度是豆表溫度。烘焙師藉此掌握生豆溫升狀態,輔以香氣變化及形態變化等,以此做好咖啡烘培。即使影響烘焙的因素眾多,僅以上圖簡單呈現不同曲線,得以呈現不同烘培結果之概念圖。
A roasting curve is a graph that records the temperature and time changes during coffee roasting. The X-axis represents time. The Y-axis represents temperature. The plotted temperature data reflects the bean surface temperature. Roasters use the roasting curve to monitor bean temperature changes, along with aroma and physical transformations, to achieve an ideal roast profile. Although many factors influence the roasting process, this graph provides a simplified representation of how different curves lead to distinct roasting outcomes.
